Cambodian Lemongrass Paste (Kreung) | SERI COOKS

  • Kreung (sp?) is a classic Khmer paste made of turmeric, lemongrass, galangal, garlic, and kaffir lime leaves. I’m going to teach you the way my mom taught me which is - no measurements. We don’t believe in that! Trust your intuition as the exact measurements will always vary from family to family. This recipe will make like about 2 cups of kreung.
    Also... Seri Cooks has FINALLY RETURNED to TH-cam! I was doing that in my Rock voice but you get it! It’s been over 2 1/2 years but your boy couldn’t stay away any longer.
    I’d like to thank my friends, family and subscribers for supporting me in my journey to share Cambodian food. Special thanks to my lady, Catzie for screaming, I mean gently nudging me to make another video. I really hope you enjoy this video and don’t worry, you won’t have to wait another 2 1/2 years for another one because we filmed a 2nd episode already ahhh!!!
    In the video, you will see guajillo chili pods but that’s not part of the recipe. Please don’t @ me. I was filming another episode which called for the ingredient immediately after. I won’t spoil the surprise yet!
    Recipe:
    2 lemongrass stalks
    1 bunch of galangal
    3-4 pieces of turmeric
    10 or so leaves of kaffir lime
    8-10 cloves of garlic
    NO GUAJILLO CHILI PODS LOL
    Cut up all of the ingredients finely or into manageable sized pieces so you can mash them.
    VERY IMPORTANT: Get you a pestle and mortar cuz we don’t use no food processors out here. You’re not going to get the same consistency and basically, you gotta work for it ok. I use a little salt here and there to help grind down the mixture. You should end up with a coarse paste that you can use in soups, marinades and stir-fry.

    I only just stumbled across your channel. Thanks for reconnecting me back to Khmer food. I'm going to make the salaw machu recipe for the family tonight! Off to the shops to find guajillo chilli although not sure if my local supermarket stocks this 🤔🤨

      Thank you so much! Salaw machu krueng is one of my favorite recipes. If you can’t find the guajillo peppers, that’s ok. You can use a can of red curry or another large dry chili pod. Enjoy!

    Hi, Seri! Just found your channel and looking forward to making your kreung. A quick question: Can you substitute kaffir lime zest for the leaves? We're lucky enough to have a pretty steady supply of kaffir limes here in Austin. If so, is there a corresponding quantity of zest for the leaves? Thanks and looking forward to more videos.

      Hi Sam. That is a good question haha. Honestly, I always just throw a few leaves in there and hope for the best lol. I'd probably do a table spoon of zest and see how that goes. You really can't mess up kreung unless you go way overboard. Hope that helps!
