Interesting approach to prepare a sculpture parts to pinning: Shaping out a rough bone structure first and gluing the limbs in position, before you finish fleshing out the body. What surprised me the most however was how easily you could detach the whole dress, when the clay had dried. how did it not stick to the body?

Man, this is getting me motivated to return to traditional sculpting again... Bought a resin printer not too long ago and learning to sculpt digitally without a clear workflow is kinda burning me out. (I really want to use the printer since I feel like it would be wasted money if I don't)

Yes, I agree. Printers can duplicate as much as they want with only the materials they support. With hand work, there are many other things needed, such as silicone for molds and resin to pour. It takes a lot of time and money, but that is also the best part.
We use a type of clay called Air Dry Stone Clay. It is similar to paper clay, but it is composed mainly of stone dust, so it is very sturdy after drying. I use a brand called New Fando.

Stronger than polymer clay. Basically, it can be glued if moisture is available. Clay is made from stone flour, pulp, synthetic adhesives, preservatives, and water.

This clay can be glued by applying water. Adhesion without water allows for easy removal after drying.

There seems to be a technique of 3D scanning and digitally finishing a sculpture that you have carved yourself to some extent.

硬いです。
机の上から落とした程度ではびくともしません。柔軟性もあるので、思い切り曲げない限りは割れることもほぼないです。
その分乾燥が遅く、スカルピーほど細かい造形は難しいです。

In the video, I dry them before each step.
In my case, I use an oven because natural drying takes a long time.

Use a temperature-controlled oven, as over-heating will cause expansion and deformation. I dry mine at 90°C for 15 minutes.

I see you don't use a metal armature, what do you use to ensure it doesn't crack and or break?
You can make armatures simply by drying clay that has been molded into bars and combining them with instant glue.
This clay dries very solidly.
