I love those sweet pepper varieties you have. I usually pickle them with shredded cabbage, cucumber slices and green tomato slices ratio 1 part pepper, 3 parts shredded cabbage, 1 part sliced cucumber and 1 part sliced green tomatoes. Make your usual pickling solution and add a few chopped up hotter peppers if you like. Happy gardening and thanks for the show and tell.
Hey Peter. I'm waiting on my 4th variety to ripen--the big pepper--and I plan a taste test comparison video. We call what you make chow chow. It's so freakin' good. Love it with a bit of spice.
