    That was a informative article, here are a few more tips for how to make wine…
    Use the right equipment. Things like plastic buckets and bins come in different grades of plastic. You must use the food-grade plastic products not the cheaper buckets you might use to clean the floor!
    If plastic buckets and bins start getting scratched and grazed, replace them. The grazes will start harbouring microbes and eventually you’ll have a spoilt batch of wine.
    If stirring the must (the initial mix of fruit and water etc.) in a bin, scald the spoon with boiling water first to quickly sterilise it.
    Fill and top up airlocks with cooled, boiled water - never straight from the sink.
    Avoid metal spoons and sieves with fermenting wine - i.e. after the yeast has been added. Sometimes they can taint the wine. Avoid wooden spoons, which are hard to sterilise - plastic is far better.
    Reusing wine bottles is fine, ask friends to save them for you and check with local clubs or restaurants who are often happy to give them to you. Wash out immediately as a clean bottle will be a lot easier to sterilise when you come to use them.
    Rack your wine to clear it before bottling. That is, using a syphon tube, suck up the wine from one demijohn into another leaving the sediment (called lees) behind. The tubes with a base and valve are cheap enough and a make this quicker. Allow the wine to settle for a week and repeat if necessary before bottling
    Never judge your wine by the taste as you bottle it. Most often you will think it's a disaster. Some wines can take 2 years to mature. As a general rule, try a bottle after 5 or 6 months. If it tastes harsh, leave the rest for at least another six months.
    Allow time. Time is the great wine maker and you should never be in a rush. We’ve made wine that was nnine months in the demijohn before bottling and drunk it three years later. The next year it was even better!

    This sounds like the kinds of people who won't last very long after the apocalypse.
    This detailed video on how to make wine looks like a cakewalk compared to all grain beer brewing.
    Seriously, just do a bit of further research. You can buy all the tools to make wine for about £100 and that's being generous.
    Producing alcohol is extremely easy. But making quality products requires a research, experiments and experience.
    Its fun. Give it a go!

      I think worrying about the amount of equipment is fine, you wont be able to get those in the apocalypse either and knowing the old ways to do it without cutting corners keeps helpful knowledge alive. I mean, what happens if one of your fancy glass doohickeys breaks and Amazon isnt a thing anymore?

      One problem he put sealed lid on the mash with yeast added ? Cant put a sealed lid on you need a air lock or the lid will burst off it has to release the gas

    @bertydastard Thanks for your comments. The seeds wont do any harm, filter them out by transfering to a second demijohn and passing the juice through a muslin cloth.

    @macandmit I would not recommend trying to insert corks without a tool. You can buy a hand corker for about £4 ($2-50). The tool in the video is more expensive. Also there is a thing called a Zork - it seems to be like a sealed cap but I dont know much about them or where you buy them from.

    Tyvm...I made some strawberry wine..I am going to open a btl today..but, I did everything u did, except for the campden pills in the strawberrys...omg, I hope I didn't mess up. Oh well, a lesson learned...I am fixing to do more strawberry, after thanksgiving ..and I will follow your way. Ty again for this complete video..

    There are natural sugars in the grapes but they alone will not produce an alcohol content similar to that of wine. By adding sugar, you give the yeast more "food" and therefore they will continue to produce alcohol. You can add just yeast if you want but it's never going to get up to 11-16% alcohol. Hope this helps.

    @THEKIND253 The best test is to taste them - if they taste sweet and have a good flavour then they're ready. If they taste 'acidic' or 'tarty' then they are not quite ready - this flavour will give your wine an acidic taste. Colour is next - green grapes turn white or yellow, red take on a deep hue. Also if the birds are eating them that is a good sign.

    Question, when you sterilised your bottles or Demi john , do you rinse them with water afterwards or are they ok to use dry? I have a bit of an after taste that am worried about. Thanks

    Good video. The Campden tablets are essential - I tried last year without them and the wine oxidised - this year am doing it by the book and is much better.

    You don't need yeast provided you don't mind bugs. I have seen it done in Naples Italy and did it my self. You smash the grapes leave them outside and wait about a week or two drain it and there you go wine.

    What is the flavor of the wine? Is the sugar absolutely necessary? I really don't like sweet wine.. It gives me a headache.

    Bad way.
    You should not use chemicals. Use wild yeast instead of commercial yeast.
    Dont use sugar in the primary fermentation.

    It takes about 90 pounds of grapes to make 5 or 6 gallons of wine. I forget which. That sounds like a lot but one mature vine can produce like 20 pounds of grapes.

    Good clear instructions! I didn’t realise it could be months before the second fermentation stopped...
    we have grapes on a vine here and I wondered if I could freeze them for later use, as we might be moving house before the second fermentation has finished. If I can freeze them, is it better to leave them in bunches, or remove the grapes, clean and then freeze them..? Many thanks. M x

      Yes you can freeze them. I take each grape from the stem and put them on a tray covered with greaseproof paper (so the grapes form a single layer and dont stick to each other or the tray), then freeze them. When frozen take from tray and put in a sealed bag in the freezer until you need them.

    I'm making wine for the first time. The only part I don't understand is how you know how much sugar to dissolve in the water due to the specific gravity. My specific gravity is 135 grams, so how much sugar should I put in?

    We drink more wine than beer but have had better luck making beer at home than wine, meaning the quality is better and closer to the better commercial stuff.

    i am trying to learn also. i think when the yeast starts to slow down and making bubbles. as with making bread the yeast will only rise so far. i am told to get a yeast that is for the type of wine i am making. i went to the bev. people locally and that is what they sold me.this will be my first attempt to make wine from our 85 year old vine. white with seeds. hope it is worth it.

    I tried everything .... and it came out great .. bur i have one question... what happens if the the air enters inside the fermentation jar ... no other harmful materials just air ... will my wine become a vinegar??? It has started to smell like Kambuja tea

      If it is a small amount of air then no problem - any bacteria will die off. If it is a large amount then it may spoil your wine. For best results - keep air out and keep jars sealed.

    Hi, I have made a Youngs homemade white wine kit only today and it needed topping up to 4.8 ltrs but the demi john was too small, so i couldn't fit it in.
    I immediately transferred it to another demi john i have which is absolutely massive, the demi john is only about 1/5th full of wine as its that big.
    My question is this, does it matter that there is a large area of just air? It does have a bubbler airlock fitted on it with a rubber bung, so no air can get in.
    Day 1 is today, will it be okay

    There are a few factors in how to grow grapes plant. One plan I found which successfully combines these is the Grape grower folio (check it out on google) it's the no.1 plan that I've seen. look at all the interesting information.

      No. The contact with the air bacteria in the secondary bucket will eventually turn the alcohol into vinegar. Keep safe.

    @asdsadsadsa212132131 I dont think so. In the early stages the alcohol content is low. Also there is a large amount of carbon dioxide gas being given off causing a gas flow out of the juice and I assume any air will be expelled with it. I've had no problem with my fermentation using this method.

    the removing the grapes from the stalk is a pain in the ass, we had a very good harvest this year probally around 25 pound or so from 1 grape plant, i plan on getting another couple so we can make larger batches of good organic wine we use no pesticides on any of our fruit trees or grapes

      No. It must be wine yeast. Keep safe.

    A few questions..How much time elapses between Step 17 & 21? After squeezing the grapes into the second bucket and adding to demijohn(carboy) how long does it sit? Also how do you know fermentation is complete? No bubbling from airlock?Thanks

      I was told to watch the airlock. Also, based on the type of yeast you used, It may take longer. I am being told, to be safe, to let it sit for another month in a consistent 70 degree area. First time for me, but my grapes looked and tasted amazing from the start, so who knows how this will go.

      Just be very careful when judging whether or not fermentation is done by observing the airlock. My dad once lost at least 25 litres of wine because it appeared that no more bubbling was occurring in the airlock and he decided the fermentation was finished. The pressure built up in the demijohn after he plugged it with the solid rubber stopper and shattered the vessel. Wine all over our basement floor.

    Thanks for the video, can I use normal bread yeast when making rice wine? Second question is can I extract the yeast from a bottle of wine and use it as a starter, for example. Can I use a commercially avalable wine and use the liquid in there as a starter for my (grape juice). My guess is that any bottled wine should contain yeast?

      No you can't. There is no yeast in the bottled wine anymore. And if, it is on the bottom of the bottle and it is dead. Why dont you buy bakers yeast in a grocery? It does the job perfect.

    Otherwise it sits at the bottom like a layer of sand and the yeast cant get at it.

      20 kilo would be good I used 40 kilo for 10 gallon you need to make 14 / 15 gallon at start to get 10 gallon after you take all mash out .

    hello everyone!!! I have a question, can you raise the alcohol content higher by restarting the process all over again once the first run is done? I mean after the yeast has died and the wine is completed.

      Yeast die at a certian alcohol level. You could say they die from alcohol poisoning. If you add fresh yeast it is possible they would find some sugars to ferment but would soon be overcome by alcohol volume. Champagne yeast will give you a little higher ABV.

      dbkstylez No, you can only find higher alcohol tolerant yeast.. at a certain percentage, the yeast dies. The only way to make it stronger is distilling the alcohol but that would make liquor.. it's no longer wine.
