Lowering my costs for 2025/Two potato recipes

- I go over some basic things I did before the beginning of this year to lower my costs. I had to use up some potatoes that were sprouting, so made a couple of different old recipes with them.
Potato pancakes:
Mashed potatoes, salt, pepper, chopped onions, an egg, flour
Potato croquettes:
Mashed potatoes, ground beef, chopped onions, grated carrots, egg, salt, pepper, and bread crumbs.
When I had my last pup, I worked 8 hrs a day, but now I work 12 with commute time included. Otherwise, I’d go to the pound and find a pup. Definitely will get one when I retire. So many doggies need good homes!
I make use of leftover oatmeal by making patties (with salt,pepper,and a little garlic) then fry in a little butter. Then serve with a fried egg. Delicious!
I don't like to throw away food either. I keep a freezer safe container in my freezer and add any leftovers that do not contain dairy products. When it's full, I add a can of tomato juice or broth and make soup. It's never the same twice! ✌️ from a retired Sister.
Also, I had liability only and hit a deer last month. I'm looking to add full converage to my 10 y o. Honda. I can't be without a vehicle and I can't afford a payment.

I like listening to your videos. I sweep or do dishes while your video is on. When I hear something that may be better visually, I rewind.
My advice? Take your time with your video style. Figure out the parts you enjoy. No need to perform or create a palatable format. The more you film, the better you’ll get, the more you’ll refine your content. You’re unique and genuine. That has value. Take your time.
I make compost in an old cooler. I never turned it until summer. I raid the recyvle bins for containers. A friend asks for open bags of garden soil when she gous to garden centers and gets top soil at greatly reduced prices.
Jessica over at Three Rivers Homestead TH-cam channel does a pantry challenge every January and February to intentionally use what they have put up . Lots of channels are participating, you may find so good ideas for your cabbage🙂

Keeping track of your monthly expenses is a great idea. A way of knowing exactly what you did, or FORGOT to do.
Hi Kathleen, I finally have somewhere that I will be able to garden this year. I am excited about that. I plan on saving by doing winter sowing in clear containers for example milk jugs so I don't have to buy starts. And try and join a seed exchange in my area. . I wish everyone an abundant garden this year!

I use calendar's that stores give away to list all my bills on and check them off as they are paid so I don't forget them. My cognitive skills are challenged due to health issues. Like the laundry sheet idea and would appreciate if you could let me know what company you order them through. I have asthma also and don't like all the scented stuff or all the plastic jugs. Also wanted to ask how often you do laundry so I can figure out the cost for me and my husband. Your bowls are beautiful. The potato dishes looked delicious. Great way to use up leftover mashed potatoes. I'm trying to eat down the freezer and pantry food. I'm trying to do a no spend January, February and March so I can put more in the emergency fund. I think I have enough food stocked away for that long or longer. Great video Kathleen.
I use Earth Breeze right now. I think I do laundry every week and a half or so? I honestly am not sure. I've been trying to wear my clothes two days in a row if I'm not gardening in them, except for underwear, of course, and socks. Thanks for watching!
Another wonderful video, Kathleen. I have never made potato croquettes, but will definitely make them after seeing this recipe. I am often at a loss as to what to make with potatoes. It's always the same it seems, especially with leftovers. Just 'reheat'....not anymore! Thanks so much! I really enjoy watching your videos. You are so REAL. Surprisingly to me, I have only spent $16.49 on groceries since the beginning of the year (and just prior). Most of the cost was for dairy products. I am eating from my pantry and freezer. Blessings from Ontario, Canada, as always!

We always laugh (sarcastically) when my husband gets a cost of living raise at work because we know as soon as he gets it our insurance is going up at least that much or more. Its irritating. We have no options to change the coverage we get. Its expensive and we almost never ever have needed to use it in the past almost 9 years. I wish there were better alternatives. I am scared to even know what it will cost us to have it once retires. Thanks for sharing. We make a lot of things out of potatoes. So fun to see what other make out of them too.

They are. I warmed one up today with the air fryer setting on my mini oven to get the crunch back.
I will try your recipes they sound good. I am having a no spend January. It has been going pretty good, I have only spent on things that are very necessary. I am handicapped but I am challenging myself to gardening this year. Food prices are crazy here in Virginia.

Watching you make potato pancakes took me down memory lane. I came from a farm family and my mother knew how to use up leftovers. She'd make potato pancakes and we loved them. I've never tried the croquettes, but they look/sound good. An idea for your frozen cabbage might be Colcannon. It's an old Irish dish (mom was Irish) that uses potatoes and cabbage. We'd either eat it as a side dish, or with browned sausage, or bacon, or ham chunks in the dish. It was good. I like your financial worksheet. I think it helps most of us to be able to see where we've been and where we're going, financially. My husband was a federal employee for his entire career and our cost of living was eaten up by increased insurance rates. Like you, we are very grateful. Both of us have had some serious health issues, and our insurance has never let us down. (Thank God!). One of the things I've started doing is tracking what's in my pantry. Since I have limited storage, I want to make the best use of it, and fill it with the healthy foods we enjoy. I used to see items at the grocery store and think, "hey, that looks good," but if I didn't have a real plan for it, it seemed to stay on the shelf. I've gotten more practical. I steer away from trying lots of new things (boring, I know). Kathleen, I really am enjoying your videos! Keep up the good work!
Thank you, glad you like the videos. I have seen a video from a youtuber, who I think worked as a chef. Can't remember his name but he made Colcannon, and other things. I've made one or two of his dishes. Will have to give it a try.

As I have asthma also, I know what you are going through. I actually had to stop driving a friend because she insisted on wearing perfume even though she knew it caused me to have an attack.
I love the potato cakes I also make them from leftover fried potatoes I will try the other ones with hamburger that looks delicious. I like a sprinkle of garlic too

Great chart for expenses. I get senior discount for electricity natural gas and property tax in Wa state. Maybe you can too in your state. 😊
There's a homestead exemption when you turn 65 but you also have to be totally disabled. There's also a law that just freezes your property taxes at 65 years of age. You still have to pay them but they don't increase, from what I understand.
I've never seen potato croquettes! They look so good. I do make salmon croquettes, which I love.
One of the reasons I am still working is because I'm accustomed to having health insurance through work. Plus prescription drug coverage. And Medicare is difficult to figure out!
Medicare is so complicated. I hope I can keep my current insurance too, when the time comes.

I switched to auto bank drafts on all my monthly payments so there is never a late fee. My big expense is at the pharmacy and out of pocket medical fees. Do you not have any RX or medical/insurance fees? I love your new cookware. That was a nice present. Ty for the recipes, I'll try them both. I love potato cakes. I have to boil and rinse my diced potatoes 2-3 times to remove the starch and potassium.
I guess I don't like not having control of the money going out so haven't done most of my expenses in autodraft. Yes, I spent $900 last year in medical expenses. I think I talked about it in one of my videos. Came as a shock to me. I thought, maybe $300 or $400.
After having had migraines my short term memory has deteriorated, so I have set up payments from my bank for most of my bills. I also send in a set amount for things like my utilities so that I can build a credit against the high months. In the past when I hit a rough month I have skipped a payment, or sent a reduced amount, because of the credit I built up with a function on my bank account.
I occasionally like a recipe similar to bubble-and-squeak (potatoes, onions and cabbage), IF I need only a small amount of cabbage for an event I might buy a bag of shredded slaw. But I think you're a lot like me and make my meals based on what I find on sale.
I don’t think I have ever eaten potato croquettes but they look delicious. My husband gets Social Security Disability with Medicare Insurance and he has a pension from the state. So he had the same small increase in benefits that was immediately consumed by the increased Medicare rates. I had to retire early in order to be my husband’s caregiver so I had no income or insurance for almost 3 years. I signed up to begin getting my Social Security at the earliest age and just started receiving that last Spring. So we have had to make significant changes to our budget and lifestyle to be able to survive month to month. I put in a small garden last year of mostly tomatoes and peppers, a few green beans, onions, squash, zucchini and cucumber. I like to can so I put up tomato sauce, dill pickles, and a few kinds of relish. Most other fruits and vegetables I can for my pantry I get from either farmer markets or U-pick farms. So I have jams, juices, applesauce, and potatoes. I only buy meat when it’s on sale and then can that and homemade broth. Other store bought items I always buy according to sales and stock up. That has saved us a significant amount with our grocery budget. We also rarely dine out anymore because those prices are outrageous and I am both gluten and lactose intolerant. We don’t do any paid subscription things like Netflix.

I dont think you need to change your video times. They are fine the way they are. People can either speed up the videos in their settings, skip to parts they are interested in, etc. when you are doing a vlog, its not like doing a how to video. It encompasses more of your life for instance, this video you talked about your budget other aspects of your life that are on your mind like transportation, things like that and then what you’re gonna have to eat that day, which is a big part of all of our days so for those of us interested in lifestyle, vlogging, senior retirement budget vlogging, your videos are the right length so if people aren’t interested in the entire thing, they just aren’t interested is my opinion I like your videos the way they are I think if you want to shorten them, you shorten them if you want to lengthen them, you lengthen them. You are vlogging your life how does anyone put a timeframe on that? Sorry we don’t wanna hear from you unless you can do it in 10 minutes. That’s not what vlogging your lifestyle is all about.

I don’t have health insurance because I don’t make enough to warrant giving it away to insurance. I should have done things differently in my life, I guess. Luckily if I have an emergency I can go to ER and then have it written off. I hate that because it’s not other’s responsibility to pay my medical bill. But I have to do what I need to in order to get by!
I make a batch of mashed potatoes and freeze them in a sprayed muffin pan.Then when they are frozen I put them in a freezer bag and freeze them.Then I take out how many I want for a meal .If I lose my car I'll buy an electric bike.

Do you have a subsidized food pantry In your area or can you qualify for food stamps.
I bring in too much to use a food pantry or food stamps. My grocery budget sounds small but it's just me and I have an overabundance of garden produce over half the year. My problem is just buying whatever sounds good when I'm in the store. Even if I bring a list, I don't always stick to it. With a strict budget I'm hoping will help me with that.
I fear for what is coming in 2025. Anything to reduce costs and be more self sufficient is prudent. Take gentle care.
Hopefully the awful policies can be reversed and our costs will be lowered.

@marikalathem813 Inflation was less than 2% under Trump. He's got a lot to clean up this time as the current president was mentally unfit the entire 4 years. Focusing on equity & gender confusion wasn't helpful.

I dont compost anymore because it attracted rats! So I just turn the soil kind of mulching?,
I pay 450 a month for my husband and I, but with that said my husband's insulin has decreased in price.
I'm sorry, that's crazy. I know of people who pay even more. I don't know how they do it.
