There's a few producers working with older oak which gives the wines a fatness and density that their tank fermented counterparts don't exhibit. They are, of course, still quintessentially Australian iterations, but they are very very good. Try the Wolta Wolta (collab between Loosen and Jim Barry), the Rieslingfreak No 1 (Grounds of Grandeur) and the Forest Hill Block 1 (no oak, but the fruit profile is muscly and full, another cool wine to have a look at). You know what... I recently also tried the Stargazer riesling (TAS). Was really impressed by the concentration and detail. Lotsof flavour. Hope this gives you something to start on!
