Then when it comes to editing they pull those chunks from the streams on their hard drives into editing software on their computer, that way the computer is only dealing with the most important bits.

I know very little about the video editing world but I do have some experience extracting clips from long recordings and stitching them back together to make a basic montage. I recommend noting and labeling all the timestamps you want to add to your clip from each stream and using ffmpeg with the -copy option to yank them from the original recordings without doing any processing or reencoding. This takes literally a second or two. Save them to a different directory using the label you gave the timestamp. Then you can open all of those in your video editor without blowing up your computer (hopefully).
