KETO would be health related, yes. You can still do it but much higher risk of failure, so I wouldn't do it unless you're experienced with niche sites and SEO.

I'd say - if this is your first or second site I would not go for a niche wihin YMYL. It takes a lot of good quality links and you might not rank even if you get that. The problem with hiring external experts is that they might not want to link all their expertise to your site forever and that might be a problem if you base your business on their expertise!

If you suspect people are just looking for products (like searching for "best snickers for small feet" - an e-commerce listing would probably do well and could outrank you - but if #1 does NOT have the sorting in the product list, you can beat it. Depends on the topics you choose. "Is it safe to ride a motorcycle with X" is definitely YMYL but "Do X gear last longer than Y" etc. will not be. You can often find non-YMYL topics in most niches. Think about whether you would prefer a real specialist yourself, if you were to search for an topic...
Just from having the word "gun" on your site you will probably not be accepted at Adthrive. But Ezoic will probably take you. About YMYL, I don't think so, but it's really hard to say. It's definitely in the borderland of YMYL if GOOGLE isn't smart enough to distinguish between toy guns and real guns, and they might not be able to - always...
