It's about time someone did a comparison of the 83mm burr options! Like Ben said below I wish you would have had a set of the cast and boyt burrs. Like Ben I have been liking the Boyt burrs and have found the clarity to be increasing with seasoning. I had the DF64V and running them at 700 rpm with MP burrs vs my DF83 with Boyt burrs wasn't that much different with the Boyts being a bit less punchy in acidity and slightly more body and sweetness. Running the DF64V at 1400 rpms the boyt actually had higher clarity than the MPs so i am looking forward to getting my DF83V next week so i can try the Boyts at lower rpms. Keep up the great work and if you could test a set of the cast burr it would be much appreciated because there still isn't much information on them even on various online forums.
Excellent video. I have used the 83mm SSP a couple years back with my E37SD. It remains one my favourite burrs all time and your description of them is really good. That grinder moved along and I have been waiting for a manufacturer to make a decent 83mm grinder. I now have a set waiting to go into my new 83V and I’m looking forward to comparing it again against all the other grinders I’ve had since then.

Great video, I like that you explain how they're all good, just different, and that you prefer the higher clarity burrs for your coffees. I haven't experimented with too many 83mm burrs (they're pricey!) but I've tried pretty much all the 64mm versions! The SSP HU and SSP MP are similar geometry (just smaller) and I found your explanation aligns with how I found the same burrs in the 64mm world. I have the DF83 gen 1 with stock burrs (and also currently using BOYT / Compak K8 burrs) which look similar to the SSP MP but are more balanced I think. Initially I thought the DF83 was very conical like, higher body more blended flavours but made coffee nice and tasty (even with those older stock burrs). It had a lot of fines for pour overs but seemed to work well for pour over / Aeropress too (maybe I wasn't so picky back when I was testing that though, I'm more into pour overs now). But once I opened up one layer of the declumper screen so coffee flows through quicker and easier, I found I didn't need to use the bellows (barely any retention) and clarity went up a lot, but body dropped a lot too. I have other grinder(s) with SSP MP in 64mm so I was kind of digging the lower clarity but still tasty and smooth profile actually. I think as burrs got more seasoned it got even higher clarity. I popped in the Boyt burrs and didn't think there was THAT much of a difference (maybe flavours are a little punchier now, coming through stronger) but I'm told they're also going to get higher clarity as they get seasoned! Oh the other thing you can do that is FREE to get higher clarity is to turn on the grinder and slowly feed the coffee into the burrs. It will also make your shot flow a lot faster so you'll need to grind finer to compensate. Being inconsistent with this will also lead to inconsistency in your shot timing I'd imagine though! Like you were saying sometimes some coffees aren't going to benefit from the highest clarity MP burrs. I tried some roasters rejected 'seasoning coffee' and it was really gross on my SSP MP 64mm burrs, on the Breville Smart grind pro and Sette it was actually pretty decent! Even those 'lower end' lower clarity grinders can still give good flavours, they're just more blended together. I didn't get a sharp chemical lavender taste I got on the SSP MP burrs, but I got a coffee that had subtle lavender notes! Low clarity burrs / grinders work well especially if you're into more chocolatey traditional coffees and enjoy higher body, I found even for milk drinks you can actually tell the difference between a low body high clarity espresso shot and a low clarity high body one! Some people seem to say it doesn't matter if you're doing milk drinks (of course I do more like small cortados not doing huge lattes where you can barely taste the coffee). I normally do feed my coffee slower into the grinder but for my testing I wanted to simulate how they are not doing that cause not everyone is going to take the time to do that, just us nerds!!! 😂 I haven’t tried the BOYT burrs but I know some people who have them and seem to like them, especially for the money, they’re fairly cheap if memory serves. @@coffeenerdaaron I didn't like the 64mm SSP Cast burrs v2 (but I did like the Similar lab sweet styled but different Mizen burrs from option-O) But it's possible the 'lab sweet' geometry does work better in larger burrs since that's what it's originally designed for (80mm though). SSP is coming out with a V3 64mm Cast burr (which looks like it might have been inspired by the Mizen burrs a little).

It’s interesting how burr geometry can make a difference in the cup (aside other variables). I thought I was upgrading an Encore to an Ode SSP but ended up with 2nd wave dark roast and 3rd wave light roast grinders.
nice review! cleared out a lotta stuff about these burrs for me. just one question tho, if i want to use the grinder exclusively for medium roasts into milk drinks, should i go with the turin standard or dlc espresso burrs?
Have you had a chance to try the MP’s in the new 83V grinder? I just placed an order for the 83V with DLC espresso burrs but would like to eventually get the MP’s as I love what they in my DF64 grinder for light roast coffees.
I recently changed out the Italmil burrs in my DF83 v2 for DLC burrs. I have been having nothing but troubles. I can't seem to get a fine enough grind for espresso. After aligning the burrs and zeroing the adjuster I have to turn the dial down to about 2 marks above chirp to get a fine enough grind for espresso. A half mark increment takes the brew from a 60+ second shot for 32 grams, to about a 10 second shot for 32 grams of espresso. I just don't seem to be able to dial the new DLC burrs in for espresso. I have re-checked alignment of the burrs a few times, using a red dry marker and a 3/8 socket on the tightening bolt within the grinder to turn the moving burr gently but with positive contact against the stationary burr. Most of the red marker is rubbing off. So I think I have a decent alignment. Hopefully there is a simple solution that I have not been noticing. Otherwise it is back to the Italmil burrs.I have been using a mediumi roast Ethiopian Yirgacheffe coffee.
Hi Aaron, great comparison. I wonder if gou have tried 98mm offerings or 80mm and how wouos the 83mm ssp compare. I have 83mm hu and wondering about what i might be missing out on.
Great video! I would be very interested to see how the 83 DLC espresso compares to the classic 151a of the Major, the 151b the also the Niche Duo uses and the 151c which is the most aggressive of the Mazzer burrs, just saying ;)

The DLC espresso burrs are a fraction of the cost of the SSP HU burrs. I couldn't justify expense of the SSP HU's, but might consider the DLC as an upgrade for my stock DF83. 🤔 Thanks for the video. 👍
Thx for your efforts! Regarding standard non-dlc burrs - are they the same as mazzer 151a version by any chance? Geometry looks pretty similar to me...but then, they all are round and metal...

As for shot times I haven't directly compared times and EY to similar 64mm burrs so I can't say with any certainty that it's an across the board result, there would be a lot of other factors that can impact shot time but I'm sure it plays a role. Comparing the MP's to other burrs I can see how the extraction would be the same or higher with faster shot times, those burrs are pretty intense on espresso so with the way the extract and amplify the coffees intensity i can imagine you would get those results!
Question if you know the answer: I’m new to the espresso hobby. Been pulling great tasting shots on my BDB using Methodical roasters Belly warmer ground on my Niche Zero. Tastes great as straight espresso, Americanos, Lattes and cappuccino. My question is if I use a specialty coffee that is lighter from Tim Windlebow or any other light roast…are you limited to straight espresso’s and americanos or can you also use for milk drinks? Thanks
Great question! I wouldn’t say you’re limited to straight espresso, it depends on your taste preferences. Sometime lighter roasts with a light of brightness and acidity don’t make for great milk based drinks, they can be a bit sour tasting when combined with milk in my opinion. But some do great paired with milk, it’s really a per coffee sort of thing, not one blanket statement of lighter roast don’t make good milk drinks. I’ve had some I thought wouldn’t be good with milk but turned out to be great, and some not so much! 😝
My DF 83 v2 has been a distaster for one reason.. the upper burr will not stay seated and thus zero reproducibility. So sorry I purchased but hopefully is being resolved with an open box replacement..
I keep telling a co-worker and friend about coffee or spirits. Brewing methods, style, technique are not better. Just different. But not being aware of everything makes you a noob...bahahahahah got em.
