THANKSGIVING IN AN RV : RV Full time w/9 kids

- We were really nervous about celebrating holidays in the RV because we didn't know if it would feel special or not. We don't have the kitchen space to make our usual recipes, the dining room to feel special in, or family/friends around to celebrate with.
The Best Stuffing Recipe - Serves 4-6(We always double it!)
3 slices Bacon
1 large Red or White Onion - chopped fine
1 C Dry White Wine
1/2 tsp Salt
1 tsp fresh Thyme
1/2 tsp Pepper
1 Tablespoons butter
10 cups fresh bread cubes
chicken stock
Cook bacon until crisp. Remove from pan and chop fine. Add onion to the pan and cook until onion is beginning to brown. Add wine, salt, thyme, and pepper and adjust the heat to high. Boil rapidly until the wine has almost disappeared. Add butter. When it melts and bread cubes and cook over medium heat to toast. Add bacon bits and stock until desired texture.

There are times in our lives when we are so involved in "what is missing" that we don't see what is here.
I saw an Awesome table...decorated with love....plentiful bounty.....happy bunch of great, fun kids....a Dad with a bit of a mischievous streak (lol)
And a Mom who loves her family so much that even when everything is good- she still wants her babies to have more!❤️

I love how you adopted 5 children that is very respectful and dedication.
So you had the kitchen space to still make an amazing meal, a huge dining room in the great outdoors, and a large family to celebrate with. It was different than what you're used to, but still amazing. You are blessed.
I know you must hear it all the time but here it is again- you've got a truly wonderful family with kids that would make anyone proud. I know you never get tired of hearing this and I also know that you probably never take it for granted. Happy Holidays!!!

This looked like an amazing Thanksgiving! When we were young our parents would always take us camping in the desert with our group of friends and the adults would prepare the dinner in the RVs. We'd all sit in camping chairs around folding tables and enjoy Thanksgiving dinner. The most important thing was that we were all together 😊. Those are some of the best memories I have of my childhood. You did a beautiful job!

The table looked great and writing things you are grateful for was a lovely idea. I was impressed with your stylish writing. We don't celebrate thanksgiving in New Zealand but I think that it's a great idea to regularly talk / think about what you are grateful for. Even though I'm sick I'm so grateful for having an amazing support team especially my parents. I feel very blessed and grateful that I have the Lord to carry me when I'm struggling. It's like having your best friend with you 24/7. I know that most of my comments mention me being terminally sick and I'm sorry that maybe it's a bit boring to read. It isn't my life however its a big part of who I am and what I do. I don't see my health as negative as it's made me a strong people, I have a stronger connection with the Lord now and it gives me knowledge to be able to help others that are sick or going through a difficult time. Everything looked beautiful and the meal looked delicious! I loved the ideal of the table runner and writing what they were thankful for so you can look at it years to come! I know it wasn't with extended family, nor inside, but it looks like it didn't bother the kids, and showed them what the holiday is really about!

What great memories you are making for your children! When they are all grown, and bring their families over for Thanksgiving, they will say "hey, remember when we had Thanksgiving at the dunes". My parents brought up 4 kids, always camping for our vacations. It's some of my fondest memories growing up.

thanks for sharing that stuffing recipe! It is similar to one I learned from an old boy friends grandmother. She made the stuffing, then had a shaken bake type coating on chicken or fish pieces, laid it over top, and baked it. It was so yummy.
