Everyone's initially depicted as a Survivor, but after a short period, the match will start for real and some players automatically become Cluckles. From there, any Survivor that dies also becomes a Cluckle. The Survivors win if, after the final shrink from the Circle of Life, they manage to get into the Evacuation Zone and stay in there alive for 30 seconds. The Cluckles win if they manage to kill/infect all the Survivors before they can escape.

S.A.T is one of my favorite animes, almost as good as the manga
