    I'm a huge fan of your channel. You have pretty much every recipe I have been looking for plus many I didn't know existed even. Just one query on this nellikai pickle. The lady I attended a fermentation workshop with called Kobo Fermentary on Instagram said "Don't boil or steam the Amla as that will kill the microbes, just use them raw". So can we skip the steaming process in your recipe?

    Instead of apple vinegar can I use normal brewed vinegar which is not synthetic

    I use pink himalayan salt. Last time I got slight pink one. So had a doubt whether its good or not. But now its okay after watching your videos .

    Do v have to steam the gooseberry..?? I always cut the raw ones and mix it with the masalas and after few days it vl become soft.

    One thing I learnt totally new from you is "" pickle can be good for us"". When I studied, it was all how bad its, so we are to warn patients against it. I do make pickle in the north Indian way, but won't eat. Thank you for the probiotic comment, specially.
