I just found this channel from your other channel! A lot of the time, I shop whatever looks good and CHEAP without too much thought of how to use it. What helps me though, is a clothes shopping method. That is, there is always a closet full of “classics,” that are versatile in many different cuisines in the kitchen. For example, for me it is onions and rice. If I have these two ingredients and some sort of protein, I’m good to go with whatever is on hand. Works for me and I get to express my creativity and ingenuity. 😊
i do this but put the cold pre cooked bacon in the pan and let it get to temp with the pan. heats up the bacon and you get a lil bit of bacon fat to cook your eggs in
I've been a big fan of swirling my eggs like that ever since I saw Julia child do it in an episode of the French chef years ago - Never seen anyone else do the same. With the heat and amount of eggs a bit dialed in, you can do it just fine in stainless steel with no sticking. Usually my indicator for the right amount of heat is ~15 seconds after the butter stops sizzling
I’ve never tried the swirl method for scrambling. I usually use Gordon Ramsey’s method of 30 seconds on high heat, 30 seconds off heat, stirring the entire time. I like my eggs pretty custardy, so I usually pull them early. For sandwiches, I’ll then sometimes let them set like Ethan did, throw a slice of American cheese in the middle and fold it all up like a package. Probably still pretty messy, but it’s so delicious, I think it’s worth it!

Kenji on Serious Eats recommends salting your eggs 15 minutes before cooking. I've found that makes a substantial difference in reducing the water that comes out of them when they're scrambled
This is truly only 7 minutes if you have a preheated oven or broiler and ready made bacon. It will take a little more time, but my work process would be; Pan on medium high heat. Slab a couple of slices of bacon on the pan. When first sight of browning ad a little bit of butter. When browned take off the bacon and let "dry" and crisp up. Ad a little more butter to the pan and toast the bun cut sides down in the butter-bacon juice mix. Crack and whisk eggs together (I always add fresh ground pepper and some chilli flakes). "Wipe" the pan "clean" with the buns and take them off, letting them rest and "soak" toasted side up. Turn down heat to medium, ad fresh scoop of butter to the pan and then the eggs. Stir a couple of figure eights in the eggs and then let settle for a short moment. Twist pan from side to side like an angular pendulum to make sure the eggs don't stick. While the eggs are still wet on the surface add the cheese in the middle and the bacon on top. Then fold the edge in towards the middle all the way around. Place bottom half of the bun cut side down on the "omelet" and the serving plate on top of that bottom side up. Flip over the pan and plat "sandwich", remove pan ad hot sauce to the eggs and place the top half on the bun cut side down on top of it all to crown your meal/snack.
Love English muffin breakfast sandwiches! Never understood the trend of using bagels... bite into them and half the sandwich contents get squeezed out! 😅
Never have a problem with squeezing contents out with a bagel breakfast sandwich. :/ I love bagels for this(everything bagels especially), but english muffins are definitely a more calorie/carb conscious choice if you're trying to watch that. Both are really good. Croissants, too.
Being good at multi-tasking is mainly about being comfortable with what you're doing. And that takes practice. Plus these videos dont show the clean up aspects involved in all this stuff which you've got to figure into when at home normally.
When you crack your eggs, I think you need a little more force. I find the right height and basically let it fall. I also use a paper towel to dampen the contact and catch any potential egg white (a tiny amount) spilled.
I would definitely still add some salt to the eggs, especially when they're so voluminous as that. While the bacon and cheese certainly gives overall salt, it's not distributed, so the season-less eggs will still stand out. Hot sauce does help a bit with that perhaps, but meh, a little salt just to ensure it tastes great doesn't hurt.
I agree that English Muffins have the right structural integrity for a breakfast sandwich. It just barely edges out biscuits and croissants for me. I tend toward sausage over bacon, but there's nothing wrong with bacon. Try putting mayo on the bread though 😋

I do a version similar to this, in a similar amount of time. However, instead of bacon I form a quick sausage patty using a silicon ring mold, then cook a single egg with the same ring mold, to have it turn out nice and round. when done i have a perfectly cooked sausage pattty and fried egg that fit right onto my toasted english muffin. With how expensive breakfast sandwiches are at whatever fast food restaurant of choice you visit, it's nice seeing videos like this to remind people that it's easily faster, healthier, and far less expensive to make this at home than it is to buy it

Funny, I kept doing my eggs this way after failed attempts at doing waffle house style omelets. Their 2 egg omelets have a souffle thing going on, minus the browning and whipped whites. They constantly spin eggs around in a whole lot of their proprietary fat after fluffing the hell out of it in a milkshake blender, so I ended up with this whenever I kept it too macro friendly. I'm going to do it on purpose now lol.

I love your videos, Ethan, but did you rent an apartment just for filming? It's weird that the kitchen has absolutely nothing in it! Could you put a coffee machine behind you or something even if you won't use it so it looks like a real kitchen!
This concept rules. The pre-baked bacon saves so much hassle. I also get a bag of day-olds any time I go to my usual bagel spot. Slice, vacuum seal, then freeze them, and use in place of the english muffin. Bake for a few mins before putting a slice of cheese on and throwing a whole cup of water into the oven to psuedo-steam
I almost never do scrambled eggs on a breakfast sandwich but you do seem to have achieved a nice texture there. Might hafta give this a go! I also think it's worth pointing out that if you're using Thomas' english muffins, you owe it to yourself to find a better brand. They're just too flaccid and textureless imo.
