Mexican Crema From Scratch - NOT Just Thin Sour Cream

  • Culturing your own Mexican crema using buttermilk is as easy as falling off a taco. All you need is cream, buttermilk, salt, and a bit of time. While crema is known as "Mexican sour cream", the name doesn't do it justice and once you taste the genuine article, you'll probably skip the tubs of ordinary stuff at the grocery.     i use goats milk that was inoculated with a culture a long time ago and just continuously inoculating the next batch straight after milking the goats in the morning. it has a vary similar flavor to the La Crema i grew up with in california with the same texture. though if you let it for or a week you will find it gets sharper and lumpy, i just whisk it and im good to go!

    Bought some from a local Mexican grocer and it seemed thicker than that tub you had but the flavour was amazing didn't ask about it at the time though also in Canada.

    I am have made creme fraiche. Cultured buttermilk inoculating cream. But wanted a lower calorie version. So I took cultured buttermilk and inoculated store bought Mexican Crema. Not quite as nice as creme fraiche but lower in calories. Both are nice!

      The natural cultures in your local air will also have an effect on taste as will the temperature of your countertop. I find mine varies a fair bit over the course of the year but all delicious. Thanks for watching!

      I can't tell you because we don't have that chain up here in my corner of Canada. I would suspect they'd make a big deal of using real crema on their menu but perhaps it's some sort of proprietary hybrid? Make nice with someone on their line and see if they'll spill a few secrets maybe? Make a batch for yourself and do a taste to see if it's close. It'll be delicious even if it's different.       I hear Chipotle is everywhere down there. There might be a few in the big Canadian cities but out here in the hinterlands we have to make our own. I do remember the guys from a chain called Taco Del Mar out west who supposedly make a similar line but here in the east it's a burrito wasteland so I resort to making my own with reasonable results when I can import the dried chiles.       There is definitely something different about their sour cream. Similar taste as SC but thinner and extremely smooth. Whatever they use, it's good!

      I tried making Créme Fraîche. The recipe is similar. For 2 cups of Heavy Cream, use 3 Tbsp of Cultured Buttermilk. I didn’t have Buttermilk so I used Kefir. It still worked flavor wise, but it didn’t fully set like it would with Buttermilk. It wasn’t runny, but it wasn’t as thick as store bought Sour Cream. Give it a try!

      I wish I could buy it here but no chance in rural Eastern Canada. I can't even buy corn tortillas in the shops and have to make my own. The nearest tortilla factory is 1000km away! Can you imagine a world without tortillas. (taco sad face)

      Sorry for the lag in reply. I haven't made any for a couple months but just started a batch. The measurements are actually not incredibly important because the culture from the buttermilk will grow on its own. Like yeast in bread. As long as you get enough in there to start it feeding, you'll get crema. Having said that, I put in 1-2 tablespoons of buttermilk for every 500ml of cream to give it a good start at culturing the whole batch. Get close to that and you'll have delicious tacos in just a few days. Thanks for watching!

    Did this guy imply that Mexico doesn’t have air conditioning? Or is that Canada doesn’t see temperatures over 100°? And Mexico was a topical location?

      Answer B. We don't see temperatures over 85F in my neighbourhood. And good Mexican food is even more rare up here. Lobster and maple we've got, good tacos, not so much.

      Sometimes yes and sometimes no. The liquid buttermilk you see on grocery shelves these days has been 'cultured' purposely, often in the carton, rather than being the by-product of butter making. Curiously, dry buttermilk powder IS usually made from the leftovers of butter factories. If you churn your own butter, you'll see a difference really quickly as it's noticeably thinner than the stuff you buy. Thanks for watching!

      @@MrSporksHands thanks for the reply! I did watch another video on making cultured butter.. mix heavy cream with the cultures found in yogurt by adding one 1tb of kefir.. this will yield butter and buttermilk which then I guess you can use THAT buttermilk.. what a process lol
