  • Today Dan and I are in the kitchen together, cooking some freezer meals for our family. We haven't cooked like this in years, but life has gotten hectic recently, and I'm finding it harder to get home-cooked meals on the table every night. I'm excited to have some healthy meals in the freezer to pull out when the day gets away from me.

    I've had good results by lining glass or even metal pans with foil then freezing the food. After it freezes you can removed the food from the pans and wrap well for longer freezer storage, freeing up your baking pans and also eliminating the risk of broken glass in your freezer. When you're ready to cook, you can put your frozen food back in the same pans or baking dishes to thaw and finishing cooking. Hope this helps!

    It is VERY common to have garlic bread toasted and sometimes with cheese also, then serve with most any Italian dish. It's the best part! I'm from Florida and I don't know anyone that doesn't use toasted garlic bread. Usually broiled in oven till golden. With lots of butter! I loved your video today! And I loved seeing you and your hubby together cooking - fun! I know some people that put up freezer meals line their container with foil then once the meal has frozen, they remove it and wrap it well and put it back in freezer. That way all the containers aren't stuck in the freezer until time to cook.

    I am 71 years old and from Florida and I have always had garlic toast with my pasta dishes. And that is also how it's served in restaurants here. Great combo!

      Trick for lasagna, don't bother cooking the noodles. They cook perfectly in the oven.

      Is garlic toast like garlic bread? Italians will often use plain rustic bread, Scarpetta,= scraps to soak up saucey foods, but not often.

    Here’s a tip. Put your cottage cheese in the food pro, add an egg and whiz. The consistency will be that of ricotta, easier to spread!

    Just pressure canned 5 pints of kidney beans. My first foray into pressure canning! I bought an electric canner and all 5 sealed. It was so satisfying to hear that pop! There’s only two of us, so I can can small batches as needed. Really enjoying retirement!

    Great video!! If you don't want to leave your glass dishes in the freezer you can line the with parchment freeze them then pop out the casserole or whatever you are freezing and store in a reusable bag or Tupperware and they stack nicely and you don't have to worry as much about your glass pans.

    Little tip if you're using a garlic press, don't peel the garlic, just pop it in and squeeze, the skin won't come through but will stay in the bowl of the press. We eat garlic toast with pasta, so you're not the only one. So glad that you're going to do more freezer meals, I thoroughly enjoyed watching you and Dan in the kitchen. Thank you sooo much for sharing xx ps you can also grate your garlic, again, you don't have to peel.

    I am Canadian but I'm also Italian and we always had garlic bread with all pasta dishes! Maybe with 6 kids, it was a way my Mom stretched the food but I still do it. I have lived in Portland for 16 years now and never thought it was odd, I have fed many Americans and not ever a complaint. Awesome channel btw

    We’ve always eaten garlic toast with our pasta. Coming from a big family It made food stretch. So pretty common with everyone I know in the southern states. Absolutely loved seeing Dan cooking with you today. You too are so funny together

    Hey! I learned that you can use uncooked lasagna noodles and it turns out perfect! Lessens the prep/total cooking time and you don’t have to worry about breaking the noodles! You can use either oven ready or regular lasagna noodles

    From TEXAS - YES, YES indeed we have the garlic toast with any Italian dish - even when living in Chicago - all Italian folks have the garlic bread made into toast with their dishes - so you are on target with having the garlic toast, PLEASE know it is really nice to see the both of you together working on the dishes (cooking) together. Really like your vids seeing the log home, wood cook stove and how you oreserve your foods. At age 73 and being a retired nurse working long shifts and little time to cook - your vids are a treat.     Garlic toast and pasta is the norm here in Australia and when I cook lasagna I never cook the sheets first. Just add them uncooked and it turns out fine. Much quicker too! Love your videos

    Lift your counters from the bottom of the cabinets. You can add kick drawers under the cabinet for extra storage. This would raise the cabinets and counters, giving you additional storage.

    With adding cheese and beans the enchiladas remind me of a wet burrito, either way looks delicious

    I thought it was a global requirement to have garlic bread with ALL pasta! My son uses garlic butter on everything! And YES, when cooking pasta the water is supposed to be salty with a good amount of olive oil! It absolutely keeps the pasta from sticking!!

    Husbands and wives need to learn each other's jobs, you never know when something might happen to one of you and the other will have to pick up the slack.
    I know lots of men that spend rainy days in the kitchen with their wives learning to cook or dabbling with supervision, and wives that whip up easy meals so they can spend time learning what jobs their husband does.

    Using flour tortillas instead of corn, you’re actually making yummy wet burritos rather than enchiladas. I love your plan to pour on the sauce when you put them in the oven. My husband and I are going to try it. Great teamwork in the kitchen!

      Yep, lived in Texas for years. Ate tons of Mexican food. Flour tortillas make great burritos and enchiladas. The way you cook is great! The sauce, red or green, makes them wonderful, whether you call them burritos or enchiladas, doesn’t matter. The family is gonna do a magic trick and make them disappear. Eating them with fried egg, refried beans, fried rice, guacamole and pico…MAN- O-MAN, WHEWWWW, SO GOOD.

    Yes, we eat Texas toast that is buttered and has garlic and parsley on top with pastas. We sometimes will put mozzarella cheese on top as well. 😀

    Garlic toast is perfect with pasta! I use cottage cheese in my lasagna too. I mix the cottage cheese with an egg and parmesan cheese.

    Tip for garlic: I use a small flat microplane grater. You don't even need to peal the garlic, as you grate the skin gets left behind. Really easy and fast! Great video.

    Hello, Traditional Enchiladas are from Mexico as far back as Aztec time. Corn tortillas are filled,
    then rolled covered in chili sauce, then cooked.
    You have made burritos with enchilada sauce. In restaurants you can order any burrito
    "Enchilada style"
    but it is still a burrito, not an enchilada.
    Hope that helps with any misunderstanding.

      Garlic toast is a natural to eat with pasta, being Italian that is the way we have grown up ! Enjoy & have fun !! In Lasagna we use fresh Ricotta goat cheese , what a flavor to add !!

    Hey, I live in Virginia, and I also LOVE garlic toast. That's what I used a long time ago when I had no garlic bread, and now, it's a favorite. Wow! your freezer is becoming your best friend with all that food! Nothing like quick meals. Good to see Dan in the kitchen.

      Oh, is garlic bread and garlic toast different? In Scotland, UK, we just have garlic bread. It's crusty bread smothered in butter, garlic and herbs.

    Option: extra countertop. A separate surface large enough to work on, raised on a 2x4 or something. Like a 3" high bench or bed-table. You can test heights, and carry your work from one place to another, and possibly even store things in the gap underneath if you keep it stationary.

    Your friend was right about not adding oils or butter to pastas.
    But you need to salt the water really good.
    Not a fan of celery, but know folks that are, and that was an incredible amount of celery that you added.
    Absolutely make a thick sauce, the more meat, the more gooder it's gonna be.
    I made a white chicken lasagna the same way for years.
    It actually contains a batch of my famous spinach artichoke dip off in there, which everybody loves.
    Then one day decided to add caramelized onions to the layers, and it was incredible.
    There's absolutely nothing wrong with freezing in glass.
    You can freeze in jars or casserole dishes.
    Have frozen things uncovered to allow expansion, then cover.

    Looks wonderful , delicious meals.I use my glass pans for the freezer and they work great. We eat garlic toast with our pasta meals , who doesn’t ? I learned to use glass from watching Jamerrill Stewart Large Family 😂. Never use oil on your pasta .

    The left over noodles I cut up into small square/ pieces. I cook mashed potatoes chunky not whipped . In a separate fry pan I fry up onions add paprika mix together add to potatoes and then mix noodles into this. You need to season plenty with salt and pepper to taste.It’s a Hungarian side dish to have with sausage or breaded pork extra

    My mom always served garlic toast with pasta (grew up on the east coast but lived in Riverside, California most of her life). I am 75 years old and living with my daughter and her family in Phoenix, Arizona. They buy and serve garlic flavored Texas toast with pasta. Love your videos.

    Absolutely YES to garlic bread. We’re eat it with spaghetti and Chicken Alfredo also. We also put a layer of spinach in our lasagna!

    We definitely love garlic bread with our pasta meals.
    When I have bunch of garlic to chop up I like to use my food processor on pulse and blend to desired consistency.

    I'm in Ontario and yes indeed Garlic toast is a must for us with lasagna. Love, love your videos. They are always so interesting and you do a fabulous job.

    Next time you make lasagne, add a beaten egg to the ricotta cheese with a pinch of parsley. I add some mozzarella in the ricotta too. It sets up beautifully!

    Australian, love my garlic bread with lasagna and spaghetti😊when I worked full time and went to College 2 nights a week I did a bake day once a fortnight. It’s a life changer. Knowing that my teenagers could pull out a meal the nights I would be late was great.

      @cindylarade3571 We love ricotta best, but if you use cottage cheese, be sure to drain it well before adding to the dish because the liquid makes it really runny.

    We make garlic toast almost every time I make anything Italian! And a fresh salad to balance it!
    I make large batches of lasagna and cook it in the fridge over night. Then cut into individual portions and use plastic wrap and put those in a freezer bag.

    A hot tip for onions is to fry them first to get off the water and to caramelize them a bit - the flavour is amazing compared to adding raw later.

    I was raised an Italian and ate pasta a lot. We had garlic toast with salads, pasta that is not in soup form. And with chili etc. it is not just a Canada thing. Many Of us Americans eat garlic toast with Italian cuisine.

    Try Ricotta cheese instead of the cottage cheese. Mix in an egg or two and some Parmesan cheese and parsley. Another level for sure and authentic Italian.

    Pasta is AMAZING with diced potatoes( which you cook in the same pasta pan but a few minutes prior to the pasta)and frozen peas. Yummy 😋

    Absolutely! Garlic toast goes with pasta. Not just a Canadian thing. I’m born and raised in Texas, USA. Always have, always will. Also any oil in water will keep sauce from sticking .

    When we used to have a large freezer and 3 kids at home, I always tried to double (or triple) every recipe to put at least one or two home cooked meals in the freezer. Chicken pot pie is another great meal in the freezer.

    I think that's a great thing. When my kids where small I never bought pasta I always made my own. I made my own bread crumbs and always made snacks like cakes, cookies or brownies once a week. I loved to do it. I miss it very much.

    Garlic bread/toast with any Italian meal is a staple in our house. We never boil lasagna noodles for 'fresh' lasagna or freezer meal, just need sauce on the bottom of the pan. Turns out great every time. Regular noodles, no special noodles. Just cover with foil while baking. Saves a big step.

    I'm in Virginia, USA and we always eat garlic toast with pasta dishes. Never add oil to the water when boiling pasta. The sauce won't stick to the pasta. Only add salt to the water and stirring will keep it from sticking to each other when cooking.

    I always make Garlic cheese bread with Pasta dishes, casseroles, and some one pot rice dishes.
    I also make double the amount I need once a week when I cook a dinner so I can freeze a meal. That way, I build up a few dishes in the freezer.

    It’s not just a Canadian thing to eat garlic toast with pasta. I am 64 and have eaten garlic toast with pasta dishes my whole life and I have lived in potato country (Idaho, USA) my whole life. It’s normal here, except I guess for those who said it was weird. We would consider not having it weird.

    Thanks for the video. I'm so happy for you two to spend more time together! We're empty nesters, moving into a smaller farm house so our daughter and her young family can have the quarter we're on with the big house. Adult son lives on the same farm as us so I think I'm going to do up a big batch of small lasagnas! It's always nice to have something to pop in to the freezer. My MIL taught me lots(she raised 5 kids) about freezing stuff. FYI, for all you young Moms or anyone that loves to prep...she did big baking days, froze the baking as soon as it was cool, and it tasted fresh when thawed out. We prepped lots of days before harvest to have things....and no one that popped in for coffee every walked away with out having a nice baked treat,. She's 85 now and still loves to give me advice...we have so much to learn from that last generation! And yes, we always have garlic toast with our pasta meals...the restaurants serve it like that too around here(in Alberta)

    Kiwi's (NZers) most certainly eat garlic bread baked in the oven. We slice bread sticks into inch slices and smother with garlic butter and bake wrapped in baking paper/foil for 20 minutes and it's absolutely delicious with lasagna or by itself. The best part is wiping up the meat sauce with the garlic bread!
