The cake flour has low protein which makes softer texture than wheat flour. You can use 2 TBS of lemon juice substitute for cream of tartar for this recipe. The acid in the cream of tartar loosens the egg white proteins, which means the whites whip faster and to greater volume and are also more elastic.
Hi, cake flour is more delicate than all purpose flour, can try to make, for every 1 cup of all purpose flour remove 2 Tbsp of flour, and replace 2 Tbsp of that with cornstarch. Cream of tartar can stabilize the egg whites to beat swell easily, can be replaced with 1/2 tsp lemon juice. Have a Happy Baking
