You can preference things on religious grounds, remember you're a customer to the training proovider so they should do their best to facilitate, especially from a religious standpoint!

assalamu alaykum i’m also training to be a UK pilot. Idk if you can say “my madhab” to be honest, no madhab is perfect and though the 4 scholars tried to reach the correct conclusions (and they are rewarded for that) it is better to follow a correct opinion rather than just whatever the madhab says.. (sometimes there are more than 1 correct opinion) E.g we know a woman can’t get married without a wali but a madhab allows it even though there are clear prophetic statements that prohibit it.. Every madhab imam said that if a prophetic statement (that didn’t reach them) contradicts what they believe was right, the prophetic statement takes precedence (of course).. learning the religion, attending lessons is important. The reason “someone else misguided me” will not work. Let us all study the religion and get better inshallah.
How would you ascertain the correctness of the opinion of a madh'hab being a layperson? In reality, you will just be applying the principles of one school or some scholars to form an understanding of what is correct. The science of hadeeth etc are ijtihaadi. How a hadeeth is interpreted by one school needn't be seen the same way by a different school. Therefore, leave the ijtihaad to the scholars and follow one school consistently not to mix up the usool.
If you are flying long flights, there's break in between. You can pray that time. Don't create a hypothetical situation where "such and such MIGHT happen". Nope. It doesn't happen. Nobody has a problem with you praying. And you get breaks, so you can pray that time. Easy. And for short flights, you can easily combine prayers and / or pray on time. Easy again.

Great Qs, in my Madhhab the Fardh Prayers must bedone stood unless you are physically unable, so I do them stood, hope that helps in shaa Allah
