Really like this idea! Since you asked for suggestions, I had two. Make the waist a little wider in addition to taller. The cooling unit on the skirts adds a lot of bulk side to side, so adding a little bulk on either side would help offset this effect. Additionally, I really dig the idea of using the door on the backpack to put hoses leading to the bazooka, but some coolant hoses from the bottom of the backpack to the rear of the cooling skirt unit might be neat too and help sell the fact that it's all part of the same "package" for the MS. Can't wait to see where this goes!

A couple of notes in response to some of your ideas is that the Metal Gear Rex uses a radome for its railgun/nuke launcher targeting so it’s definitely not out of place for them to be paired, and I think it was in the manga or a game, but somewhere retconned the nuke launcher to also work as a beam bazooka. Not that it really matters much here but it cool stuff I remember.
I dig the side skirts idea. Rolling with your headcannon and they are for the bazooka cooling, it might be cool to flip the bazooka upside down and peg it into the skirt. So hes like holding it upside down Seen a couple gundams like that. Then put hoses connecting the cooling skirts bazooka and backpack(because its cool lol)
Having power cables/pipes feeing from the bazooka into the backpack and out into the skirt add-ons sounded pretty similar to what the G04 has; with an external power pack to help power the mega beam launcher.
If you're changing the side-skirts, you could also give it a mega-beam saber, as since the saber is stored in the skirt, you could also scale that up as well, which might look pretty cool
One trash to treasure thing might be to take a kit that comes with extra parts and focus on those extra parts. For example I built the HG Alex gundam, didnt like the thick armor(gundam under it was cooler). Well the majority of it fit right on the OG minty green GM and looks good. Might try making him a RGM-79ARA GM Juggler. Just one of those maybe some videos focused on using extras in kits might be fun and cool.
I think the big skirts add a lot, reminds me of Revival of Zeon designs and has a “big heavy coat” motif a lot of Mobile suits, especially Gundams, don’t have
The arm attaching the bazooka to the shoulder looks really bad. Hopefully he'll be replacing that one as well when working on the backpack and thrusters

For the shoulder thrusters, I think it would be good to set them up like the Sky Moebius where they're attached to the back but still hang around the shoulders since that silhouette is just so iconic for the GP02. I second the ray dome btw, makes sense to me that you'd want super long range targetting for a nuke.
About the shoulder engines: while not in space you could adjust the thrust so that the engines support their own wieght. Had to comment since I really like the design. Sorry.
EDIT: 8:28 - Will you be customizing the "beam bazooka" based on the HGUC MLRS kit's beam bazooka, or just using it as is and calling it a beam bazooka? I dunno what it is about the GP01 and GP02 specifically that none of the existing model kits do it for me. The GP03S has IMO had pretty good-looking model kits from the very outset - the original 1/144 compares remarkably well to the HGUC and MG some 10 years later - but the 01 and 02 for whatever reason always seem to be missing this or that key element, some essential je ne sais quoi. I've said it before, but I think the RD A.N.I.M.E. figures have done the best at capturing them in signature form outside of garage kits and the like. I continue to yearn for the day when Bandai's hobby and toy divisions can cross over. So many good figures I'd love to build as model kits, now chief among them being the GP01 and GP02 RDs.
I'm sorry but I've got to be the one to say this right now this kit is one of those needs desperately needs a 2.0! it's literally one of my favorite designs and it's so sad because the poor thing can't even hold its shield. XD

I discovered that the HG version is more sturdy than the MG.
A bit, but the arm still too weak to hold the shield most of the time. Had to petrify my MG. This kit needs the 2.0

Regarding the face, maybe use Kazuhisa Kondo’s GP02 as a reference? It uses a Zeta faceplate and a really nice colour scheme that looks great.
