    Even though that was obviously a commercial, I still appreciated the technique and the flavors of the paste. So cool to do on your own so you can add the amount of spice you want. Thank you, Jamie.

    I have Chef Anjali on my phone book! She does short 1-2 day workshops for Indian/Japanese cuisines, baking, etc. She's a great teacher, and her enthusiasm and energy is insane!

    Living in Leicester I'm lucky to have access to some amazing Indian cuisine. I'm also starting to explore making more Indian dishes myself. I've learnt that it's not hard, its just you need to stock up on the various spices. Once you have those you can create so many dishes. Vaghareli makhai (think I spelt that right) is one of my favourite dishes to make. Which is spiced Indian corn. Also love love love Indian vegetarian dishes too.

    I'm in Canada and there are dozens of different brands leaving one to guess which you should use. I've seen Pataks everywhere, so thank you! Now I can buy with confidence that the product is a good one.

    In Malaysia we usually make curries using different blend of spices. There's a spice blend for fish and another for meats. And both blends use different type of spices. Can you help me differentiate these two spice blends?

    I used to buy premade curry sauces, then I discovered paste and I fell in love! I mixlthe paste with the cooked meat, add peanutbutter and coconutoil and let it reduce till its a think, but flavourful sauce.

    There are different variations of garam masala depending which region in India it’s made. I personally like South Indian garam masalas, particularly Chettinad style garam masala. Super spicy but delicious!

      Justin M Have you ever seen their adverts on TV? Haven’t watched proper TV in years but I distinctly remember an advert which was like a mini history lesson of how Patak’s started, it was quite sweet :) Worth looking up on TH-cam if you have a free moment, I’m sure it’s on here somewhere! I was surprised too. I suppose we always think these things are made in huge factories & don’t have any back history. Nice to know how it all started.
