Just like my Mom used to make. I remember a time when we didn’t have an electric beater and we took turns using a hand beater and it seems it tasted even better because of the exercise. Just a tip: put the unused yokes in a covered container with water in the fridge and they’ll stay fresh until needed for a sauce , etc.
I remember my mom making this, but she would beat the egg whites without a double boiler, and heat up a sugar syrup on the stovetop to the point where it formed a thread when drizzled from a spoon. Then she would slowly add the hot syrup whilst beating the eggs and then add the vanilla extract: Same frosting, different technique. I will try your double boiler method next time, it seems more foolproof! UPDATE: this method IS foolproof! Worked a charm
My aunts and mother use to make this icing a lot. My aunt’s famous pineapple/coconut cake had this icing and it was my favorite cake growing up! Thank you

I was thinking the Italian meringue was this frosting that my Grandmother used to make but then I saw the "7 minute" title and remembered that is waht she called it or "boiled icing" . I remember it was so delicious. I will definately be making this for my next cake!!!

I made this yesterday and it never developed the crust i'm used to even after being in the fridge over night. It remains sticky. still good, but i remember it being dryer on the outside and more sugary, if that's a word. maybe my mom made it with more sugar? it's still good, i just remember it being sweeter with more of a crunch to it.
Put this on a butter golden or yellow cake, and top with coconut flakes. The BEST coconut cake EVER! If you’d like to take it another notch, add a touch of coconut extract (in place of the vanilla), and toast the coconut a tad. Boom! 😁

My absolute favorite frosting ever. Is not too sweet and nothing tops this on a chocolate layer cake. Pure divine retro enjoyment .

You can leave out the cream of tartar but your egg whites will not be as stable.

What you're talking about is an italian meringue or boiled icing not to be confused with italian meringue buttercream.

You can use the same amount of white vinegar in place of the cream of tartar for stabilizing egg whites.
