- You've probably seen those videos of street vendors in India making savory-spicy egg sandwiches. I thought I'd try doing it with an English muffin and some good cheddar. Came out pretty darn good. I think I'll put this in the regular late night rotation.

I hate being around crowds so I shopped on weekdays during school hours to avoid ppl and long lines. I would get enough to last 3-4 months. The back of my fridge has a bunch of stuff like vegetables halves, random leftovers and stuff. I look at it and say: "hmm, nothing to cook, frozen lasagna it is then" but I'm sure any reasonable person would just stab me 5 times with that perfectly fine carrot and choke me with the leeks that I cut in half and never used the rest, before making a stock, salad or roast that will be 10x more delicious than the fucking lasagna I just put in the microwave

i personally enjoy cooking and its been a 12 year hobby for me ( I started in high school). The problem i have with my cooking is that i don't like my cooking. Other people like my cooking but i don't like my cooking. Cooking is nice because you get to make basically anything you want (I make food that I can't find in my area or that is too expensive).

Eggs tend to absorb fat easily and then proceed to stick. Getting a pan well seasoned is much better insurance than clogging your arteries.

This is the first meal of yours I've attempted, having been an avid follower of your channel for a while, especially your late night sandwich episodes. Although I've been implementing your techniques of patience and butter-supremacy, this seemed to me a decently moderate difficulty sandwich to attempt, and I'm glad to report it went with nearly perfect success. I used bagels instead of english muffins, cos that's all I had in the house and, because I live in Australia, I used regular bacon... not really sure what "Canadian bacon" is. Might use more chilli and less shallots in the future (shallots is our word for spring onion). And less cheese. Or better cheese. Not sure yet. Also, cracked a beer (Cass from Korea, terrible but a great flashback from my holiday with the boys) halfway through and chucked some mf'ing Tabasco on it. Tabasco is fking dope. Top tip from you. Your channel is so relaxing but also challenging, and doesn't shout at me like other cooking shows. It's all about the art and the technique. Also, I've never really beat eggs into an omlette like that in the bowl before, so thank-you for that as well. Please keep making stuff :)
"Canadian bacon" or "Canadian-style bacon" is the American name for a form of back bacon that is cured, smoked and fully cooked, trimmed into cylindrical medallions, and thickly sliced.
