I have used this basic recipe for MANY years and it is indeed DE - LISH !! When I make them they are melt in the mouth tender .. and so yummie they are dangerous ! I usually only make half this recipe she shows.. I will consume them in mass quantities if available.. Even the freezer is little deterrent .. ! I have made them will many types of fillings for the "print well" .. lemon curd is a favorite as is black currant jelly.. It doesn't even matter if you don't fill them at all ! Oh.. and cheesecake filling......... heaven ! okay.. have i convinced you all yet ! !!!! :)
I made some thumbprint cookies today, using walnuts and raspberry jam. They were a thank you gift for our wonderful neighbor. The beauty of this recipe is that you can use any fav flavor of jam, and other types of nuts..hazelnuts, walnuts, etc...whatever you have in the house. I do like the idea of apricot and pecan together...need to try that sometime. :0) I appreciate your extra tips to improve the cookie. One such example is when you state that after the cookie ball is rolled in the nuts, they should be rolled again with both hands to ensure that the nuts are firmly entrenched in the dough. Love that! Can you just leave them in a ball shape and cook like that? And if so, can you add a small piece of chocolate in the middle? Thanks for the great tutorial-it was quick and easy to follow!

When I make them I usually add a tiny bit of vanilla and an even tinier bit of almond extract .. DO NOT USE TOO MUCH or they will be ruined... just the smallest hint and it really does make a super yummie cookie.. : D
