I discovered your channel when you were first watching UBW, and it kept me around :D One thing you should definitely note about UBW and Heaven's Feel is that they are different timelines of the same events, and one of the main point of the show is that you get the whole picture by comparing them. For example there are always things happening off-screen, and you can make educated guesses what's happening in other parts of the town based on the events you see on the other timelines.
You shouldn’t pay too much attention about the people saying which order is right or wrong. Fate is exactly like Stars Wars in terms of watch order. The prequel were made after. You got your own experience by watching F/SN before F/Z and I am glad you enjoyed it. The true missing piece is Heaven’s Feels, but the movies doesn’t fully adapt everything so there’s still some things confusing. Hope we can see more of you reacting to this universe!

Can't go wrong with whatever u start really. Whetever it's 2006 f/s n or ubw. Everything has it's pros and cons. Each series spoils stuff for the other that wasn't in the original visual novel. 2006 has bad adaptation and did stuff that wasn't supposed to be included. UBW isn't "supposed" to be watched because it's the 2nd route of the original novel, which assumes that you have knowledge of the previous route. Now heaven's feel is pretty much the only one I'd recommend not starting for obvious reasons, but starting with this one would probably be the worst one since you are expected to have the knowledge of UBW and 2006. Zero on the other hand is a "prequel" in terms of chronological order but came out after the visual novel as it is based on the events 10 years prior. Which also means it spoils you some stuff for the other 3 routes that you "aren't" supposed to know. But at the end of the day whatever gets you into it, you do you. A lot of people are obsessed with the watch order and the only tip what I'd give is that if you don't like subpar animation, skip the 2006 and do zero or ubw first.
To be clear, the 2006 FATE Stay/Night series adapts a different route of the visual novel than Unlimited Blade Works.
