Looks magnificent! And for those who don't have a skewer pan, you can also use the 'ol trusty large russet potato (1/2) and a few wood or bamboo skewers. Cut the rounded ends off of the potato but add those to the pan (I use a cast iron skillet for the grill) and stick 4-5 bamboo or wood skewers into the potato and layer the marinated meat and onions like you show. Can also cut off 2 opposite side edges of a large russet if you want even more stability. Love Your Channel !!!
I love Egyptian food, my hubby is from Cairo living in England now, he would love this gonna have to make it for him he misses Egyptian cuisine 🤣but he does make good Falafel, Bamia and Humous, we ate Shawarma in Alexandria and Cairo it was the best ever. Thanks for sharing. xx
Best food and tastier food in the Middle East are Egyptian Lebanese and Syrian, each restaurant has it’s own secret ingredient that makes the difference.
When I lived in Jericho, shwarma was one of my favorite street foods (along with falafel and kabob). They typically had pickled turnips as one of the optional garnishes, which I really liked. I'm going to have to make this. I wish I knew where I could find some shrak. One of the families we used to visit made shrak outside over a fire...it was amazing.

Not sure what the difference is between using the oven and a gas grill. A charcoal grill would be much better. Also why don't you use an instant-read thermometer to check for the correct temperature. My guess is that this is really easy to over-cook.
Also, pork, goat, and lamb. Mexico adapted this method from the Lebanese that migrated there. It’s known as tacos Al Pastor (shepherd style). We marinate with adobo, achiote, many spices and stack just the same with pineapple on top.
If you want the chicken fully covered in the marinade, then why didn’t you unroll the chicken thighs when you took them out of the package. I would recommend unrolling the chicken thighs and then washing them off, then patting them bone dry before putting into the marinade.

This is not specifically Egyptian food only. It’s the signature Arab countries food. Even in Turkey.
