I would happily chip in a ten spot (£10) for a video of seafood linguine for a tenner, seriously! This channel has so much versatility. I see, wine tasting, town visit reviews, the lot. That American chap, Rick Steves, has made a living of it and this guy is way more charismatic. His photography isn't what you would call bad either! We need more people like this in the world post-pandemic to make us smile. How about 'tasty, for a tenner' as a theme?
I like the idea of cooking the pasta in a pan to extract more starch. But I also cook garlic with the meat (I use pancetta since bacon's smokey flavor is a bit strong). And maybe a garnish of parsley at the end to give it some color.
Love the video of the Italian not giving his blessing 😂 pasta looks tasty
he absolutely gave me his blessing!

I would agree that pancetta is much better than bacon, and guanciale even better at that. Thank you for your lovely comment!
Next time you come visit we will have a Carbonara Cook Off!
Done deal!
I tend to cook the pancetta also with white wine first and reduce it before adding it to the pasta. But that still looked good to me! 👍🏻
Did I just watch you boil pasta in a frying pan? 😳
an essential component to increasing the starch concentration
Im just here patiently waiting for your BCM tips for struggling aspirants. HAHA
Ahahah legend

Man complains about budget but has like 4 cutting boards....
sadly none of the stuff in this video is mine - except for the blessing of the Italian, I will cherish it until I die.
