Spaniard here: If you don't like peppers, a very popular way of eating migas is skipping that step and instead eating them with grapes, tangerines or sometimes melon because that freshness, sweetness and juiciness contrasts beautifully with the smoky and fatty crumbs and the luscious eggs. If you make the eggs with lacy edges that gives a boost of crunch too. 😋

Sorry to be stickler, but I don't like the taste of tirizo. Can I use a mild Italian sausage? If not then what can I replace the sausage with? Thank you. 🤷😉
@@vickialway6433 No worries! you can use any other cured charcuterie meat/sausage, like pancetta, bacon, guanciale, longaniza, etc. Probably better if they have a deeper, smoky flavor(rather than something very peppery or salty) so it resembles the original dish more. Take into account, though, that part of what gives chorizo its characteristic flavor is pimentón/paprika, so you may want to skip that step too.

Texan here. I’ve only eaten Mexican or Tex Mex migas, and can’t imagine eating them with bread. If I’m ever in Spain, I’m sure I’ll enjoy the Spanish version, but in the meantime, I’ll stick with eating with tortillas. 😊

Because I am so repelled by runny egg whites, I panic a bit inside when someone says they love runny eggs until I see them and realize they meant the egg yolks and the whites appear to be fully cooked. LOL. This looks like something I'll be trying.

Looks good, but I would have to forego the bacon and chorizo, not sure what kind of meat I'd substitute, if any. I'd add diced onion to the peppers. And I'd have my egg on the side, fried firm not runny (over hard). I like the technique for the bread/croutons. Otherwise, this is an authentic recipe, even though other commenters disagree.

If there's no bread, there's no crumbs, so the word migas makes no sense. :)

In my So Cal Mexican kitchen, Migas is a whole different bird but this looks delish!
It looks delicious to me with all that bacon fat. I respect you trying to be authentic. This is not a vegetarian dish, obviously, and that fine, however, there are so many healthy alternatives to create and to maintain the wonderful flavors without jeopardizing health. We love your program, don't take me wrong but next time, please, try to do vegetarian migas.
This is pretty awful - these aren't migas, they're croûton-sized chunks of bread.

Loved this recipe until the end. Almost no one steams eggs like this in Spain… they fry eggs the real way (no lid, ever, at any point in the frying) in lots of evoo (like a fingernail’s depth) to get really crisp edges
The “real way”? 😂 Elle CLEARLY SAID she likes a runny egg. It’s her variation of the dish.

You break up the egg on top of the migas to coat it with the runny egg yoke. Fry egg sunny side up and use enough olive oil so you can use a spoon to put the hot oil on the egg whites to cook them; about 1 minute process if the pan is at the right temperature.
That doesn’t look like any Spanish chorizo I have ever cooked with. It’s usually a much darker orange color from the paprika.

@@tananario They said it was authentic Spanish chorizo and it isn’t. Why not simply admit they made a substitution? Maybe they don’t actually know what Spanish chorizo is.
I agree. That pale sausage is unlikely to taste like genuine chorizo, and certainly won't give the colour that spanish chorizo would lend the dish.

I believe the garlic went with into the bowl of bread. As for the heel I would have added it to the original mix.

man that 'dense' crust would have been nice fried up and seasoned along with the smaller diced pieces, then reserved til the end to use as 'Soldiers' with those runny yolks
