I don't know much about proxy, but giving up a wave to catch the one behind the tower doesn't seem to be an advantage according to the technique's proposal. Or did I get it wrong?

It depends. In this case he can't contest them anyways. Azir can just straight up bully him and zone him off and he can't really do anything about it. So just staying there he gains nothing.

It gives you fake pressure in lanes where your champ can’t win anyway, or if you are stomping a lane you can force tower damage cuz the enemy can’t afford to tank the wave so it has to crash, meaning the tower gets nuked
Also also in this games specific use case Azir can just beat him up if he doesn’t do anything, meaning Kayn goes without resources unless he forces a situation he can recall in, which Azir allowed by chasing Kayn off the proxy instead of just farming

its a joke about it being a proxy top lane strategy, known to die a lot when played by a certain baus. thus 'grey' meaning the tint the game has when you are dead
