    Cooked up a storm last night with this top recipe. Love the addition of chorizo. This will be ace to cook without the prawns for my mum who has suddenly developed a fish allergy in her later years.

    Once the water is put in and it's left to cook you should not stir the paella. This allows the rice at the bottom to burn into a crispy crust called socarat

    A quick question: Doesn't paella usually get finished in an oven to get that crispy texture on top? When I lived in Barcelona, every paella I had was served like that.

      I think that's maybe just a regional variety. It's often cooked in a gigantic paella pan and there is no way it would fit in an oven

      Definitely no. What it goes into the oven is "arrós al forn" that literally mean baked rice dish

    It's an "arroz con cosas", not a paella.
    Paella rice must be almost dry, it's not a rice soup neither a risotto.
    You should NEVER stir the rice, as stirring prevents the Maillard reaction that causes socarrat from occurring.

    If it was just for me I would do it without chiritzo but my partner has already said definitely with so that's what I'll do

      Then he loves Arroz Campero, not Paella (which does not have chorizo)
      Not all spanish dishes are called Paella. Paella is one of many spanish rice dishes.

    Paella with chorizo, definitely NOT a taste of Spain as chorizo is not used in Paella

      I think the issue comes from the usage of the word Paella for any kind of spanish rice.
      Ravioli and Spaghetti are both Pasta. But you can't make Ravioli carbonara using spaghetti...
      Same with rice.
      Arroz a la Paella, Arroz Campero or any other spanish rice dishes are all Rice. But Arroz Campero and others are not Paella. They are dishes of their own
