If you don't add liquid how do you get the air bubbles out of the cold pack?
I assume internal spoilage because the water can carry bateria
so with the hot pack is the meat just browned? or cooked fully? and if i fill the jar with beef broth do i still need to add canning/pickling salt?
Browned to do hot -packing.
Will this work on small game such as rabbits and squirrels? Also quail , dove and turkey ?

Why should liquid not be added to cold/raw pack?
Why was there air leaking up the pressure gauge?
It wasn't sealed properly when installed.
So why add watter to the brown meat but not the cold meat
Simply put, water is not added because meat makes it's own broth in the jar. Often, it makes enough broth to fill the jar. If not, there is no reason to add broth or water. It has no effect on the process or the safety of the canned product.
