Actually the reason why omega is not effected from the neg damage is because it’s actually a separate file that appears when you get kicked out from flowey absorbing those souls
It was always obvious that enemy stats don't always mean much mechanically given how Toriel has ridiculously high stats for the Ruins yet only actually has AT/DF in the single-digits in the code, but I find it incredibly interesting that Undyne the Undying is kind of scripted in terms of damage. You'd expect it vs. Omega Flowey, Sans, and all of the other geno route "fights", but Undyne would have to run off a completely different formula given that even at such a large negative attack value you're still dealing damage. If anything, I would've just expected her to have negative defense so that your damage numbers looked more impressive in a normal fight. I wonder why Toby Fox made the fight that way. I'm not sure if you tested him, but does Asgore's fight work similarly at all? If this were some sort of failsafe mechanic, it'd make sense if all of the fights where Mercy isn't an option had "scripted damage" of some form.
i personally think (in terms of in game reasons) it's cause Undyne was already supposed to die, cause we one hit her when we were about to hit monster kid. She's determined yeah, but shecd still melt because of it

Execpt for Crystal (snowdrake's mom) She has a defense of 0 and 400, and you can reducer her health. But a code in the game's files revert her lost hp back to 400. So its actually possible to "kill" Crystal

Mettaton NEO uas opposite of Undyne, that any damage, even if u hit him with stick on 1st lv he will die. in scripts he has negative defense at all..
Also, maybe she takes a base minimum damage + (normal amount but minimum of 0) or something
