Ganache is just cream and chocolate but if you change the ratio of choc to the cream it changes how firm the ganache will set. When using dark chocolate I tend to use 2:1 dark choc to cream, or white choc 3:1 white choc to cream. However for large projects like this I buy it ready made from a company called Sweet Success :)
