If you will take a hint from a old meat cutter if you grind your fat first then spread it over the beef on its first grind than you mix it with your hands and the second grind of the whole thing goes into the package it doesnt hurt the fat to go three times through but the beef or venison will get kind of mushy if you grind it through a small plate three times
