I went to the thrift store the other day and found a Presto 16 qt canner new in the box for 20$. I was so excited. I gifted it my neighbor who has started gardening and canning last year and had to borrow mine or our friends canners. While we didn’t mind, it is still so much better for her to have her own. She was in tears and so therefore I was too. It blessed the both of us. I have also found them along with jars, iron skillets, and the real bundt pans at estate sales. I like to think of carrying on the homestead traditions with our younger generation.

Thank you. One thing I have learned, though it may sound corny and old fashioned, is you can never give too much love away. It’s like creativity, the more you use it, the more you have. I don’t tell my stories to get kiddos. What I get in return seems to me the greater gift. Told you it would sound corny. Lol Just speaking truth though.

To open a lid with out damage....Take a table knife, put on top of lid, now apply the can opener on knife, instead
of lid, and open. The knife is preventing direct contact with lid.

I never see the technique of using the band to open a sealed lid. Done by using the rolled edge side of the band on the edge of the lid and push up. I only use this method and it works just fine, does not damage lid and is easy to do.

@@KittyF54 Then why not start designing and manufacturing REUSABLE LIDS inside America and ON AMERICAN SOIL?! And exceeding international standards by several times so that they can INDEFINITELY REUSABLE. Non-biodegradble and non-ablating silicone-silicon rubber-plastic polymer seals are already available inside Russia and being non-biodegradable means THEY WILL NOT LEACH INTO YOUR FOODS regardless whether they are extremely acidic or alkaline and processed at a much higher pressures and temperatures. And no thanks to American sanctions, we cannot export such indefinitely reusable food grade seals and metal lids to America. SORRY!

When I was at the Amish store (1 1/2 hrs away) the subject of lids came up and an Amish woman overheard and said she had lids at her little country store. So I was able to get a sleeve. She had bagged up others and I did not buy them all so someone else could get some.

I tested re-using 2 piece metal lids 10 years ago to determine if and how many times the flat metal lid could be re-used. To do this, I heated the lids in hot (just below boiling) water, filled 9 regular mouth Pint jars with water (1/2" headspace) and canned them at 15 psi for 1 hour (standard 10 minute steam vent, bring to weight jiggle, start timing). After removing the jars from the pressure canner I allowed 12 hours for them to stabilize and then carefully checked the seals and carefully removed the lids with a can bottle opener so as not to bend the metal lids or deform the edge. I repeated until I saw the first seal failure, which was at Cycle Number 10. I backed that off to 8 cycles to reduce the number of seal failures to near zero during regular use. This technique of course requires that you be careful not to bend the lid in the middle or around the sealing edge and that you mark the lids to keep track of how many times you've re-used them. I haven't seen anyone of TH-cam do any actual testing and show the results - perhaps you'd like to? I'm a single test point and would be interested to see if you got the same results. Thanks for the great videos!

Cool! That is a lot of effort..Thank you! Some of my flat metal lids have multiple dates on them as well..some are older than 3+years too. The key is to ensure they are not nicked or bent. When I use a knife or the bottom side of a jar lid for opening a jar I use my other hand as a fulcrom to pry UP on the canning lid...I have never bent a lid! Makes me cringe to see people use a bottle opener to open jars.

Word of mouth is really a good idea. I tell everyone that I'm really getting into canning and my daughter-in-law's mother just gave me 2 boxes of canning jars and rims she had in her garage that she meant to throw away. She also mentioned that she has a friend who wants to get rid of jars. Bring them all my way! I'll gladly take them! Like I said I'm just in the beginning stages, but I know I have several hundreds of jars now and just have to make sure I keep a steady supply of new lids (and continue collecting jars ;))

Harvest Guard & Tattler reusable canning lids and rubber rings are safe, economic and available. They are both US made and I have been using this type of lid for nearly 15 yrs. They are easy to use and only vary slightly from the common process with metal flats. And they use the same metal bands that come with your ball style jars. Online ordering is presently not being halted and these have a life time warranty on the lid the rubber rings last several sessions. If you have trouble getting metal lids I would get these. Also try ordering Italian, german and British canning jars . Kilner, Weck, Leifert, ecetera. They are the same standard mason jar mouths in reg or widemouth.

My grandmother always used baby food jars to process her freezer jam. Because it freed up the ball jars for things that she had to process a non freezer way. I always remember that when I start running low on jars or pantry space. Some things can be moved from pantry to freezer or the other way around, as long as you think it through from the start.

I've been using recycled spaghetti jars etc for years for preserving. As long as the original lids are dent free and the inside surface isn't scratched they seal well and the produce (jams, pickles, relish and sauces) have lasted well for years. For the recycled jars, I wash the jars and lids thoroughly, heat my jars up in the oven, put the hot jam or sauce in the hot jar, place the lids on tightly and as they cool down the button on the lid pops down giving a perfect seal. For water bath canning I use fowlers jars, because that's all that was available, or so I thought. This year I heard about pressure canning and began my journey with this new way of preserving. I always wondered why no one seemed to use recycled jars in America, (I'm in Australia btw) but I faithfully went out and bought all the proper ball canning jars and lids and a Presto canner and I've had a great time (I can't wait for my garden to get into full production). It's been a lot of fun canning meat, soups and stews but I'm not sure I would have had the courage to try my recycled jars in the pressure canner. When my garden gives me the usual glut of beans I'm going to give it a try. As you said, what's the worst that could happen? I could break a few jars and lose a few beans. Some of my recycled jars are quite sturdy so I could win too. I guess I am fortunate that pressure canning is not that well known in Australia yet so I have been able to get a good supply, I'm glad I got in early, but now supplies are getting short here too. Thanks for the great info in your pantry chats, I've learned a lot from you guys.

Perhaps the reason the USDA and the Canadian Food Inspection Agency recommend against using one piece lid jars is because if we all figured out just how easy it is to make a big batch of your own marinara and can it on a Saturday afternoon we wouldn’t buy Ragu.

Fowlers Vacola use a system with glass jars and lids, metal rings and separate rubber seals. The rubber seals can be re-used multiple times, and the glass lids last indefinitely. I have also successfully used standard supermarket jars left over from purchased jams and sauces for many years without any failures. I wouldn't recomend them for meat products, but they are certainly fine for jams, jellies, fruits, sauces, chutneys etc. You can check for a good seal as the 'dent' in the middle of the lid pops back down as the contents cool (both audibly and visibly!) and any you may possibly be concerned about can be used first. However I haven't had a problem in the last 20 years.

Had to drive to the Amish country 2 states away to get quart wide mouth jars. Waited 2 months to get wide lids. $38 for 12 jars on Amazon. Walmart delivered a box of glass shards and just refunded instead of replacing them because they didn't have anymore. So... I found some in central PA at the Amish store for $19/dozen. This year, for the first time, I purchased re-useable lids and stocked up when I found a case of single-use lids at WalMart. Also I mistakenly bought lids from China and have been using them for dry storage of beans and rice, etc. because the food doesn't touch the lid.

Regarding the jar/lid shortage, Ball posted a comment on their webpage several weeks ago that due to the high interest and increased demand on canning supplies, Ball is now restocking certain stores with jars and lids. This restocking is sporadic, and, with not be the same stock at each store. The stores that Ball is currently restocking are Wal-Mart, Target, Kroger, Ace Hardware, and, True Value. All of these stores previously were completely out. I have recently seen several cases of Ball and Kerr jars and lids in my local Wal-Mart. Others are reporting finding some supplies at Target. So, I would say for everyone to keep an eye out. Ball stated that due to the massive increase in demand for canning supplies this year, and, the effect of Covid on their manufacturing facilities, the company has not been able to meet the current demand. Thank-you for your very informative video today. You presented some great ideas and info. Blessings.

In Australia we mostly use Fowlers Vacola jars. They are specifically preserving jars. They have a rubber ring around the rim, then the lid sits on, then a clip on top. You take the clip off after it has 'popped'. The rings will perish & lids do ding & some go rusty, so parts do need replacing. If you Google Fowlers Vacola you will see the whole kit.

Thank you! Thank you! I was so excited to hear this. I have been reusing lids for years due to cost and saving them from the dump. As you indicated I check them over carefully for nicks and bends and use them with very little failure. Some of the lids have dates of 3+ years. I do not however resuse them from jars that went through a pressure canning process...I think they would be fine, but I have not done so...yet. I have also started going back to the glass lid with rubber band (GEM jars) in the pressure canning and hot water bath process. Like tatler lids you do have to tighten them down when they come out of the canner, but no biggy, just be careful about burns and not to over tighten. The rubber band is reusable and if not, you only have a small rubber band to dispose of.
As for the reuse of jars that came from the store with spaghetti sauce, jam, jelly, etc in them - for over 15 years I have been reusing these in the canning process, again, to save cost and saving a perfectly good jar from the dump. They work great! I have not had to use them in pressure canning yet (I manage jars to avoid) so I don't know how they will work, but I am sure I will at some point. I carefully check the lids for nicks, bends, rust, etc and if all is fine I treat them same as a normal canning lid and jar. As was mentioned though you want to make sure the canning time is good for the jar size - not a difficult task. I do soak my lids in hot water to soften the rubber a wee bit, but not sure this is necessary unless you are not putting through a canning process, such as for jam and jelly (I do not hot water bath the majority of my jam and jelly). I have accidently overtightened a lid while hot water bath canning and ended with a bulge in the lid but once it cooled, every one goes back to normal and seals and stores perfectly.
I can honestly say that this pantry chat has made me feel so relieved - I always felt what I was doing was safe but could never find support....I just kept doing it as I knew it was working. Reusing the jars opens up a very large window of access when you think how many leave the stores - talk to your friends and families and before long you will be over run with jars waiting to be filled - I know I am. Thanks again for this Josh and Carolyn! Take care.

Also instead of pressing canning meat, use your pressure cooker to cook the meat and then if you have a food saver I would just start freezing your meat. They have sorts of sizes of bags for the food saver. Walmart is also getting in lids! I have only seen the regular mouth ones. I got about 50 packs. The Walmart lids is much cheaper than the Ball brand. Walmart brand is 1.47 and Ball brand is 2.47 for regular mouth. The wide mouth lids are harder to find but just keep checking Walmart. So we still have lots of canning jars and lids avalable but people just use them as cute jars for storing things in, not to can in. To find a Pressure Canner is almost impossible as there is no demand, but one can get if you look around. Very few people ferment and I had to import my fermenting kit from the USA and it fascinates people lol. So we all have some obstacles, but one can overcome them. I wish my mom kept her canning jars for me as she still had the glass lids with a rubber ring and the screw lids. Would give anything for those now

Since it became impossible to get jars during harvest season 2020, my dehydrator has been really getting a workout! It is very satisfying to dehydrate many varieties of veggies and then toss them together for a pretty jar and have mixed veggies ready to dump into a pot for some hearty soup! And besides, you can save ANY glass jar for this, even if it won’t let you use a regular or wide mouth lid. I just put a heavy mil plastic over the jar and put the original lid back on it. And it’s rodent proof!

Thank you for posting this, Here in Texas we have the same problem. The stores that carry them are in limited supply and only have certain sizes. I have been patient even though I am old enough to remember our County Extension Offices used to carry tons of them and they were very cheap. You could even rent the pressure cookers. The last time I was able to do that was in the 80's. Then grocery stores started carrying them at about double what you could get them from the CEO. But you could get every size available. I heard that the BALL website has a list of stores you can look up for your area to get them. Down here I can get Pint and Quart sometimes the smaller and decorative at Tractor Supply. Michaels is supposed to carry single Half Gallon and Gallon sizes. Have not ventured out for them yet. Again thank you for this video. I will be watching.

You mentioned Amazon. I purchased himilian salt pink for fermented. It said, "non iodized" in the discription.
Later I noticed it was iodized after loosing my ferments. Amazon s discriptions on online pages arent always correct. Read ingredients after you receive the item.

My family has done home preserving for over 150 years. My mother and grandmother and she was born in 1900 have always used jars that was not ball or mason jars. They used to use the glass mayonnaise jars to Canaan you just have to make sure the lid fits the opening correctly

Before they changed to plastic i used Mayo jars all the time. I also reuse lids and rarely are problems. Maybe you could even try a rental place, unlikely but you never know. You could always try borrowing from a friend.

Also, when looking at the negative reviews, look at the time stamp. Could be to a bad batch..old or recent.

I haven't heard about the 'tool' that takes lids off without damaging them which I found interesting & ty now I'm going to have to google lol but how I remove them is I take a butter knife & place it flat side against the jar. At the closest part of the thread to where the lid is sealed. Then slightly and lightly applying pressure upward. It doesn't damage the snap lids. I have reused my lids when I have started a project and realized I didn't have enough lids. I haven't had a 'failure'. I don't make a practice of it as I am too scared it won't work. I have learned new things today. Thank you for sharing your lives with us all. :)

I have used Postum, Sunshine coffee jars, even the old peanut butter jars in pressure canning for years....works great for us.

I only use jars that I bought other products in and I have never had any problems. I use pickle jars, pasta sauce jars, olive jars etc. I just find jars quite expensive to buy here in ireland so I would rather buy a jar with food inside and reuse them. I also use the original lids and they seal super well

And that Amish store DOES sell the one piece lids. And the owner's wife uses that type. I've yet to take that on.

I had a hip replacement last year and I can really dig .. my yard looks like a Menards advertisement! Their buckets are a lot cheaper than pots!
