Those people that don't do projects or have a homelab will never get ahead in their careers. You have to have something to show I you are hungry and want to process in your career. I built my entire IT career wth just my homelab alone developing my skill sets. I still have no degree and do a lot of bash and power shell scripting in my current role. I taught myself how to code in my homelab and applied those skills at work in the real world.

What that individual do not seem to understand is effort goes a long way and as you stated, some things isn't always technical. I wouldn't be surprised what helped me get my internship is that myself and the owner of the company both make music and in the same genre at that. Keep making your Github projects and enjoy doing them, even if no one is looking today. Someone may tomorrow ;)
I thank God i did not listen to people like this 8 years ago. I was teaching myself to code with no body to hold my hand, torn in-between different people on TH-cam saying 'do this', 'dont do this'. If i did not take the leap to build that random color generator in react. I wouldn't have known anything about tech. I understand that we need to build valuable projects but I'd rather hire someone who is passionate and is ready to learn than somebody who is just looking for another paycheck
I think we all need to lock out outside noise and focus on getting better everyday. If there is something I did not know yesterday and I learnt that today. That's 100% progress and much better than these 'Here's what my marriage taught me about B2B SASS' or these 'If you are not doing X, you are wrong' people on linked in
Hmm who do I listen to... the person who is where I want to be or ... also Projects help articulate that question ever have you ever automates x or y... at least on my last interview.

Your projects are your learning. They’re not to show off. They’re for the interviewing panel to grill you on to see if you actually know what you’re talking about or if they’re fake projects.
