Low Net Carb Bamboo Fiber Fry Bread Recipe - Made of Bamboo Flour, Keto And Gluten Free

  • Fry bread or “Navajo Tacos” are crispier pillows of dough with a soft inside. Complete it by adding sweet or savory toppings! This recipe is low carb, keto, gluten free, so you can enjoy it even if you're on a special diet.
    How to make bamboo baking flour:

    Full Recipe
    2 large eggs
    185g water
    3g honey OR 1 tsp (3g) inulin (artichoke)
    8g (2tsp) dried active yeast
    100g bamboo baking flour (80g bamboo fiber and 20g ground whole psyllium husk)
    1 tsp (8g) fine salt
    1/2 tsp garlic powder (optional for savory version)
    1/2 tsp baking powder
    50g oil (avocado)
    oil for frying
    Steps:
    Place 2 large eggs in warm water to warm them up to room temperature.
    Heat 185g of water until just warm (not hot).
    Add 3g of honey OR 1 tsp (3g) of inulin (artichoke) and mix.
    Then blend 8g (2tsp) of dried active yeast with them and leave for 5-10 minutes to begin fermenting before use (on a warm place).
    Measure the dry ingredients:
    100g of bamboo baking flour (80g of bamboo fiber and 20g of ground whole psyllium husk),

    1 tsp (8g) of fine salt,
    1/2 tsp of garlic powder (optional for savory version),
    1/2 tsp of baking powder and
    mix them thoroughly.
    Add 50g of oil (avocado) and room temperature eggs into the fermented yeast and
    whisk them to combine.
    Stir the dry and liquid ingredients with a spatula thoroughly.
    Then allow your dough to rest for at least 5 minutes.
    Knead the dough lightly with your hands for 5 minutes, use a silicone sheet.
    At the beginning of kneading you may feel an air bubble in the middle of the dough.
    Don't worry, just reshape or press the air bubble out and continue kneading.
    This dough is stickier than usual.
    You can use an electric mixer for kneading (for 5 minutes, low speed).
    If you find that the kneading hook doesn't reach the dough and just spins around along without it, you can adjust the dough with a spatula.
    This is a gluten free dough, it works differently.
    Place the dough onto a floured silicone mat and sprinkle it with flour.
    Roll lightly with your hands for a few seconds to get a smooth dough.
    Divide the dough into 8 equal pieces.
    Form each doughs into about 5-inch (13cm) circle with your hands.
    Transfer them into a baking sheet or baking pan and
    rise for about 45 minutes on a warm place:
    Preheat oven to 170F (70C) then turn it off. Then put the breads inside the oven and let rise.
    This is how it looks like after rising.
    Now turn the oven on to 340F (170C). Bake it at 340F for 10 minutes.
    (start counting the 10 minutes after the oven has heated up to 340F).
    Keep in mind that all ovens and pans are different, even if they look the same or very similar. The baking time in my recipes is as accurate as it can be, but it might take you more or less time.
    Then heat ½ inch oil in a pot to fry breads on medium-high heat.
    Drop some of them at a time and allow to become golden before turning to the other side, about a 20-30 seconds per side.
    Place the hot breads onto a cooling rack and let them cool.

    I did try this recipe yesterday, but made half the amounts. I did not watch the time, so it certainly is my fault they were a bit dry...but no matter. I could use them for dipping or soaking up in a soup. Today I made again half the recipe, watching the timing...and they turned out perfectly. A really delicious bread and very versatile. Very happy with the result!

      It's the best in the air fryer, but you can also microwave them.

      I think it can be made with 1 tablespoon of baking powder + 10g of apple cider vinegar (instead of yeast), but I haven't tried it yet.
