Low Net Carb Bamboo Fiber Raisin Cinnamon Swirl Bread Recipe - Made of Bamboo Flour, Gluten Free

  • Don’t you just love the sweet smell of freshly baked cinnamon swirl bread? Now you can bake your own Low Net Carb Cinnamon Swirl Bread to create a delicious healthy treat for the whole family! It’s really easy to make and is the perfect breakfast.

    Full Recipe
    85g coconut milk
    1tsp (6g) honey or (3g) inulin
    8g (2tsp) dried active yeast
    2 large room temperature eggs
    100g sour cream
    1tsp vanilla extract
    30g oil
    100g bamboo baking flour (80g bamboo fiber and 20g ground whole psyllium husk)
    1tsp baking powder
    1/2 tsp (4g) salt
    3 tbsp sweetener
    1 tbsp ground cinnamon
    20g raisins
    Steps
    Place 2 large eggs in warm water to warm them up to room temperature.
    Heat 85g of coconut milk until just warm (not hot).
    Add 1 tsp (6g) of honey (or 1 tsp (3g) of inulin) and mix.
    Then blend 8g (2tsp) of dried active yeast with them and leave for 5-10 minutes to begin fermenting before use (on a warm place).
    Measure the dry ingredients:
    100g of bamboo baking flour (80g of bamboo fiber and 20g of ground whole psyllium husk),

    1 tsp of baking powder,
    1/2 tsp (4g) of fine salt,
    2 tbsp of sweetener (stevia erythritol) and
    mix them thoroughly.
    In a separate bowl pour 30g of oil.
    Add 1tsp of vanilla extract and
    100g of sour cream.
    Mix them and microwave to lukewarm (not hot!).
    Add 2 large room temperature eggs and
    whisk them to combine.
    Check the temperature of the mixture. If it’s too cold for the yeast,
    warm up to room temperature.
    Fill a large bowl with warm water and place the bowl with the egg mixture in it for a few minutes. Stir them a few times.
    Add the fermented yeast to the liquid mixture and mix them.
    Stir the dry and liquid ingredients with a spatula thoroughly.
    Then allow your dough to rest for at least 5 minutes.
    Squeeze the dough with your hands to bring it together into a ball.
    If the dough is too soft and sticky, knead it on a floured surface.
    Knead the dough lightly with your hands for 5 minutes on a silicone sheet.
    The dough shouldn't cling to your hands, but if it does, sprinkle with flour.
    At the beginning of kneading, the dough may fall apart,
    or you may feel an air bubble in the middle of the dough.
    Don't worry, just reshape or press the air bubble out and continue kneading.
    Mix 1 tbsp of ground cinnamon and 1 tbsp of sweetener.
    Place the dough onto a floured silicone mat and sprinkle it with flour.
    Form the dough into a rectangle shape (about 10x9” or 25x23cm).
    Sprinkle evenly with the cinnamon mixture and 20g of raisins.
    Roll the dough lengthwise and tuck the ends under.
    Cut a few slices on a bias using a sharp knife or razor.
    These slashes will help the bread rise evenly as it bakes.
    Rise for about 45 minutes on a warm place:
    Preheat oven to 170F (70C) then turn it off. Then put the cinnamon bread inside the oven and let rise.
    Then turn the oven on to 300F (150C). Bake it at 300F for 20 minutes then increase the temperature to 360F (180C) and bake it for 25-30 minutes.
    Keep in mind that all ovens and pans are different, even if they look the same or very similar. The baking time in my recipes is as accurate as it can be, but it might take you more or less time.
    After baking place the hot bread onto a cooling rack and
    let it cool completely.
    This is key with bamboo fiber dough because when hot, the inside of the dough is like slime ( as if it were still raw and wet).

    Gosh Melinda, this brings back memories when I was young. There was this brand of Pepperidge Farm cinnamon raisin bread that we used to toast and then slather it with butter! Not one slice, it was probably 4! Oh so good! Thank you, Melinda ❤️

      CATHY!!! I've made Melinda's hot dog buns and her air fryer bread loaf. The bread loaf is amazing! (Had to add a bunch of spices to mask the psyllium husk flavor -- she recommended Anthony's, so just got some of that; definitely smells better).       @laprofessora64 😆! Good for her! I believe I made the brownies with allulose and BochaSweet? or just allulose. It worked our just fine. I'm not too keen on erythritol, stevia or monk fruit. Although, allulose and BochaSweet doesn't always work since it makes the dough very soft to work with. Sometimes you may have to add more "flour", but I love those sweeteners. I'm pre-diabetic. Oh yes, Irene, let the cinnamon raisin bread call you🤣

    This dough looks very nice. Can be filled just about anything like cocoa powder, jelly or small chopped apples . I will try it definitely.

    Hey, great page! I don’t have whole psyllium husks in my country and can’t order food from abroad because of regulations. I only have ground psyllium husks powder, do you think your recipes would work with a modification for powder or do you not recommend trying it? Maybe you have more experience in powder please answer me 🙏

      If you use psyllium husk powder, the recipes will work perfectly, but the dough may turn purple during baking. I think they grind the seeds completely (this is what causes the color change), but you can't grind it that fine at home. You can try psyllium husk powder in a recipe to see how it turns out. 🙃

      Oh! Does the kind of inulin matter? I tried blooming my yeast with my inulin the other day and it didn't bloom, so I had to toss it and try it again with sweetener. Then I read elsewhere that it matters if the inulin is artichoke or chicory. Have you experienced issues? Mine is chicory.
