  • HRY Foods:Ingredients:1 cup semolina (sooji)1 cup sugar3/4 cup ghee (clarified butter)3 cups water1/4 cup milk1/4 teaspoon cardamom powderA handful of chopped nuts (almonds, cashews, pistachios)Raisins (optional)Saffron strands (optional)Instructions:Preparation:Heat 3 cups of water and 1/4 cup of milk together in a pot. Once it comes to a boil, lower the heat and keep it warm.Roasting Semolina:In a separate heavy-bottomed pan or kadhai, heat the ghee on medium heat.Add the semolina to the ghee and roast it, stirring continuously to avoid burning. Roast until the semolina turns golden brown and emits a nutty aroma. This should take about 7-10 minutes.Adding Liquid:Carefully add the hot water-milk mixture to the roasted semolina. Be cautious as the mixture will splutter.Stir continuously to avoid lumps.Sweetening:Once the liquid is absorbed and the mixture thickens, add sugar.Stir well until the sugar dissolves completely and the halwa starts to leave the sides of the pan.Flavoring:Add the cardamom powder and mix well.Add the chopped nuts and raisins, if using, and mix.Finishing Touch:If using saffron, soak a few strands in warm milk and add it to the halwa for a rich flavor and color.Cook for another 2-3 minutes, then turn off the heat.Serving:Serve the Sooji ka Halwa hot, garnished with a few more nuts on top if desired.
