The importance of the bael fruit in Hinduism, coupled with the fact that it tastes like mango, makes me think it would be fun to try making a bael fruit lassie, those yogurt drinks you can get at most Indian restaurants. Hi, I find it fascinating that an American is attempting bael fruit. When I was a child (in eastern costal part of India), Bael fruit juice was the best summertime beverage. Fruits that ripen on the tree and naturally fall off have the finest flavour. It becomes a little softer and frequently has cracks when it is fully ripe. It smells strongly like fruit and is really aromatic. A good ripe bael will have a pale golden colour with some cracks and an overpowering scent.

The best bael fruit is yellow all over without those brown spots. But that requires a lot of ripening on the tree and is prone to microbes. The yellow full ripened one tastes like heaven.

I thought of planting one but the pulp looks so stringy. I absolutely hate the idea of having to pull all that stringy stuff out from between all my teeth 😅 I’ve never actually tried it so I don’t know if it’s as stringy as it looks

I don't know why you had a bad experience with wood apple. I am from Srilanka and it is a favorite of mine and the wild elephants there. The key point is to find the ripe one and they vary in taste slightly. Scrape the pulp inside of the fruit with seeds and mix it with some Kitul or palmyra jaggery will do. Eating plain is not the best. They do sell wood apple jam and cordial you will not find it anywhere else.

An interesting fact is that bael is part of the Rutaceae family. Same family as citrus.

    Recipe for BELI beverage
( In SRILANKA we call it BELI )
    Scoop the pulp
Pour boiling water and rest it for 15 minutes
Smash the pulp without crushing the seeds (seeds are bitter )
    Strain it thoroughly
Put into a blender , add fresh thick milk or cream
Add vanilla ,sugar and blend... add ice cubes...serve in glasses topped with vanilla ice cream...it's delicious...you will ask for more and more

I would put it under an arbor press in a bench vice that way you could crack it in a controlled way.
