  • I live offgrid and am working toward living a hunter gatherer lifestyle combined with other bushcraft and homestead lifestyle skills. It's just me, my three dogs, my eight horses, two goats and eleven chickens out here in the sagebrush hills or at my farm property on a creek.
    A few years ago I made the decision to finally live the life I'd wanted to live since I was young and these videos are of me learning and practicing the skills needed for that lifestyle. Life is a whole lot better Over on the Wild Side!

    The sugar is just to proof your yeast (make sure the yeast is good). You can mix the yeast with just water and then add it to your mixture. (Be careful with using hot water. If the water is too hot it will kill the yeast.). Once you have added all your ingredients and kneaded the dough, if the bread rises your yeast was good anyway. But, it does help to add sugar to the dry ingredients so the yeast rises better. So, yeah, you would have been fine without the extra sugar to proof the yeast. But, you could proof it by using a small amount of your mixture with a small amount of the yeast, like a mini roll, and see if it rises.
    If the yeast had been dead, what would be the result? If you proofed it and the yeast was dead you would just have the dry ingredients to put back in the can. Or, switch to baking powder. If you added the yeast without proofing the yeast and the yeast was dead, the dough wouldn't rise and you could bake it for cracker bread. Or, add baking powder to make it rise (which is more difficult once the ingredients are wet and kneaded, but still possible by flattening out the dough and sprinkling the baking powder over the surface, rub it in, then roll the dough like a cinnamon roll and knead it a lot). Conclusion, always carry baking powder just in case.
    Great videos!

    A very good video. I enjoyed it and also wondered about you killing the yeast with the hot water, but as I had commented below, the metal will allow the water to cool faster than a glass/ceramic cup would.
    All breads are very different, some recipes call for a one rise, then pop into the oven, some call for two risings then put into pan, allow to rise the third time before baking. Just read your recipe for the kind of bread you are making. I have made sour dough bread that calls for only one rising then put into a hot pan, then bake into a hot oven 400 degrees. I also make white bread that calls for the two risings then put into baking pan, then the third rising before baking into a moderately hot 350 degrees oven. The recipe will be the deciding factor on how many risings you should do, before baking. JMO
    But it all turned out very well and looked good enough to eat!!

      Do you know which one makes it the lightest? My breads are turning out a bit dense.

    • @wvbonbonqueen
      @wvbonbonqueen 3 ปีที่แล้ว

      @@OverOnTheWildSide OK, now this is from my experience, if you Knead it more, it will rise better, and make it fluffy. If you add too much flour too fast, it will make it dense and heavy. Sourdough is dense, so if you are looking for a lighter fluffy bread, I would do less flour, knead it a bunch, that is what makes the gluten come out in the flour and only add as much flour as you need, to keep it from being sticky. I just made some bread the other day, it is Heavy, but I didn't knead it enough. It was just plain white bread. I keep forgetting to knead it more, and not add the flour the recipe calls for slowly, and only as much as needed to keep it from being sticky when I am kneading it.
      Hope this helps!!!!
