My nevri turns soft and soggy after frying, how to avoid that

Hi,
Please check oil temperature by dropping small dough ball. It need to rise up quickly without browning.
Oil temperature has to be medium hot Or slightly increase the flame and fry nevri.
Wait till the nevri turns golden and crispy.
