My explanation as to why using ender pearls and eyes of ender will anger the Blood Enderman is that it shows you've won fights against other Endermen, and as you've said, the Blood Enderman hates seeing anyone win other than himself.
Well this is a tip from me, to prepare before an attack from Blood Enderman or shortly to counter him, make sure to copy your current world and know what to do, so just in case the blood enderman attacks, the world will be deleted but the copy won't. I hope it helps ;)

I have a theory about the blood enderman despising ender pearls and ender eyes. He probably does not like it because using ender pearls are considered "cheating", since you can easily teleport far away from the mob you are battling with. The ender eyes are also cheating, because you are using them to find the stronghold rather than just finding it yourself.

Here's a Minecraft Horror Story I made: "I was mining diamonds during midnight at minecraft, I headed back in my home then a mysterious thing happened after opening my minecraft door, there wasn't beds, I checked and there wasn't a bed to sleep on, keep in mind I was in Single Player, so I placed another down and started sleeping then woke up to hearing random footsteps outside of my minecraft house, as soon as I checked, something then was running but I didn't quite catch it, so when I was smelting, a random soothing song played around with the words repeating 'Baby Girl' after 5 seconds, it was quite nice hearing it but I eventually discovered no song in Minecraft was discovered like that, as soon as I went outside of my Minecraft House and began mining trees, the song got quieter each time I walked further, then I went back in the house and the song was still playing, but as soon as I grab my iron out my furnace, it stops abruptly, then loud footsteps were rushing near my door, they sounded like stomping, as I rushed into my secret Minecraft Hideout inside my house, I saw it bust in, it played that song again but slowly and more eerie, then it started walking around, I got a full glance of it, it was tall and had a Jukebox stuck in it's stomach and it's mouth was open wide with music notes firing out the mouth, it had no eyes but it did start running around my house, I then grabbed my Netherite Sword just in case it found my hideout and went down, but then instead it busted into the hideout and I got out of it, I rushed out and it was coming after me, then it caught up to me and all of a sudden I was stuck to the chair irl and I tried to move but it wouldn't let me, then the song Baby Girl kept on playing loudly, then I was able to move again, I found out it was willing to kill anyone who likes music"

And, they are homo sapiens because they are wise too like humans. Sanguis is latin for "blood" and talman is "Tall man" in english. We only gave the creature it's own name.
