You two have hit the sweet spot of bicycle touring, realizing that you have complete freedom to go where you want and stop where you want and see what you want, completely under your own power. It's an amazing and joyful way to be in the world.
A note about the temple, it's definitely more in the Lao style, you will see these stupa-like structures in Isaan (which used to be part of Laos), there's a gigantic one in Vientiane called That Luang. I haven't seen one like this with the columbarium around the perimeter, and yes, the people's ashes are in containers behind the plaques. You will also see crematories on the outskirts of towns and villages, they are small temple-like buildings with very very tall chimneys. There will be a covered open area for the families to gather during the cremation on the same grounds. All temples and crematories are great places to stop, get into the shade and off of the road, and use the toilet. (Carry your own toilet paper!)

The long corridor with grids on the lower part of the wall is the sacred place for ashes. It is quite common in the Buddhism believing countries, people put their passed relatives' ashes in the little chamber, and the souls of the passed people is blessed by Buddha. Those chambers have pictures are already occupied. It is similar to people are buried beside the church in the Christian countries.

"Pad krapao mu, kai dao". will get your egg every time. It's usually considered extra so will add another 10 baht to the price. "Mai Pet" if Naomi wants some too but without the spice. They're making it fresh for you, and are usually very happy to oblige to spice level requests.
