It can also help calm the nerves as well, lowers the risk of tinnitus, keeps the ears or ear drums from "popping" which could happen after prolonged exposure to loud music or elevation in height, lowers TMJ, and keeps the vocals lubricated. Actual professional and trained singers can do this very well. She's fine... no one wants her to choke!
gum chewing produces saliva.. so possibly she was fighting a cold and need the gum to keep he throat lubricated.. if you listen while she is singing you can hear when her throat drys.. i agree that it does not look good.. but it's easier than a cough drop to keep in your mouth while singing..
