This dish looks amazing! I would totally prep a large portion and eat this for lunch for a whole week straight.

Just mad this and it was amazing! Ofcourse, because it was the first time it didn't turn out to be the best. The cilantro was a bit strong. But the 6 people I made this for lived it. Need more recipes like this!

I was travelling and stopped into "Taste of India" in Lawrence Alabama and had this. I loved it. I also found it surprisingly filling and satisfying.

Thx for sharing. Imma try it. But I’ll probably char (grill or roast) my carrots and cauliflower first cause I like the extra hearty sweet tang they get -which I do for other similar recipes.

I used one 15oz can of coconut cream, and I feel like it definitely made it too sweet for my liking. Consider using it sparingly!

I believe coconut cream is for pina coladas and the like....coconut milk has no added sugar

What can I use instead of cauliflower? I can taste cauliflower no matter how it's prepared and it's not pleasant.
