      Hey, I'm an expert on anthropological behavior (which basically means study of people's bullshit). Pretension is everything in New York "High Culture" scene. You're too real for them. If you want to make a splash, monogram your EDC Chef's kit. Put a poodle head on it, and have a doctor classify it as a support animal before you come. Identify as a woman, black Muslim gay chef. If they start anything about your knives raise holy hell, squeal, act like you're going to pass out. Call them racist because they won't allow a Muslim to bring knives on a plane because they're scared of little lady you. Rant about how you used to be fat because you said Aloha Snack bar and how you became thin and sexy because you said Aloha Snack Bar! (Aloha means hello and also goodbye).     My daughter is in her first semester of culinary school.
    The knife roll you used as inspiration is like the one she recieved for Christmas.
    If you could come visit her while you are in the USA. And visit her class.. that would make her year! Her chef also studied in France.

    Nice set up. I've been a catering chef for years, so I have my own EDC. And I always try to take it when I'll be cooking.
    My knife roll with my 6 most used knives, honing steel, a peeler, microplane, and mini offset spatula.
    Then I have an elastic grid organizer with my tongs, thermometer, fish spatula, scissors, and a few other things.
    Throw all that in my backpack with some towels, gloves, pens, markers, etc, and I'm ready to cook anywhere.

    I'm inspired by this project. I bought a knife roll that is waxed canvas and has a neat leather flap to protect the blades but seeing your 2 sided item I'm tempted to add some more fabric to mine at least to create the zipper bag. Love that. Maybe a second knife roll just for tools and simply roll it up inside the one I already have.

    Chefs, even home cooks, NEED to have THEIR chosen equipment with them to bridge the gap in an unfamiliar kitchen. Our work requires both confidence and a sense of 'harmony.' I am nervous enough when I am at the creative edge, without having to use equipment I cannot instantly 'bond' with. Enter this project: of course, I would NEVER have cut off those last two pockets! Alec's kit is compact enough that two more pockets will 'earn their keep.' The idea of Kevlar fabric to reinforce the sharp edge carrying pockets is just right.

    I made the same thing for my bike tools, but I used a cut down reuseable shopping bag. Its amazing, because with the rolls I can pack my tools down into a small form factor, and take them in the car for every ride. If someones bike is creaking pre-ride, I can do anything up to a bottom bracket service or cassette change in the parking lot because I always have all my tools.

    I love how simple and quick this project can be. I would use plastic sheathes on the knives while traveling. I like to keep my edges extra protected since it takes time carefully sharpening each one to keep their shape the same. I'm using the Messermeister sheathes.

    My last "knife roll"* had my apron in place of your linen towel.
    *I'm a baker who use to move around a bit and it was nice to have an easy carry for stuff like measures, palette knives and decorating tools.

    Étant cuisinier et ayant eu plusieurs trousse à couteaux je peux dire que le premier truc qui cède dans une trousse à couteaux c'est l'endroit où il y a les pointes de couteaux donc ton renforcement au kevlar précisément à cet endroit fait de cette trousse une trousse qui résistera à l'épreuve du temps.     Nice video. I was looking for something like this for myself, but i couldnt deside how to start. Your roll is as simple as it could be but at the same time all you need. Thanks for this inspiration. PS: I think a small knife steel/knife sharpener should fit as well.

    Personally, I would have thought arranging the items inside from thinnest to thickest would help, with the thinnest items being on the inside of the roll, so it rolls up tighter and more compactly. Also, having one pocket for each knife would stop them clanging and grinding against each other as they move. Still, that's me. You do you, Alex.

    Now add a shoulder strap .
    Rolls like that are great for any kind of tools or equipment. They're very versatile and not terribly difficult to make.

      Not a bad idea for a project...but ALL I want from my apron is protection. My tools need to be in front of me, at my workstation or beside my cooking equipment.

    Put a zipper at the end where you cut off a bit, and in the cut off part put the other zipper. Make it an extension for when you fell you want to be "extra" cook. When you're feeling plus ultra.

    You should sew in sheaths for the blades. Too likely that over a time of handling, removing, reinserting, rolling, and unrolling that your blades are going to start knocking into each other. Doesn't have to be a re-enforced sheath just something that keeps the blades from bumping into each other. The other thing to consider is will this kit be taken to other kitchens that will things like spatulas/ladles/etc or to a pop up type place that you are expected to supply everything. If it is more the first you should consider bringing more preferred and commonly used specialty items.

    The only thing I would add is some kind of igniter for stubborn gas stoves, or starting an outdoor fire. Even a cheap matchbook would do.

    You might want to add an velcro-able extension port to your roll. So you could combine different sets of tools into your roll as required by the job - be it barbecue, brewing beer, etc.

    Damn man, you make me want to travel somewhere cook! I was a banquet chef, trained in rural Quebec pub food who cooked all over western Canada. Back in the day, I too had my carefully curated knife kit with knives from all over the place that spoke to my personality, kitchen tools and bits'n'bobs in it. I still have it, but it's fallen into disarray because as an Urban Planning student what do I need a knife kit for? You make me want to go use it again.

    Alex, consider using a makisu as structure for the roll. They’re inexpensive bamboo sushi Matt’s and they will keep stability in the roll and prevent knives from chipping on each other

    You could use an apron as the protection cloth that gets rolled up in the middle, gives you 1 more useful item in the kit

    Sow some extra lines where the handles go so it holds them more snugly. Instead of having big loose pouches you could have nice snug pockets for the handles.

    Love it! I'd recommend adding a small bottle of super glue to the first aid section of the kit. It's come in super handy in my workshop when I've had a cut or three! (but it's on you to know when to use or when to get your ass to the doctor!)
