I used white chocolate buttons which was compound chocolate. If you use compound chocolate you don't need to temper it. If you use other chocolate you will have to temper it so the petals stay nice and firm.
I did this one and it worked out great! This tutorial was invaluable to my flower which was the crown jewel on a big birthday cake.

Hi Olivia I guess you could use steel spoons as long as they are properly greased or maybe put baking paper on them.

How long does it take for the petals to set to take off?
Only 5-10 minute if the weather is cold. If it is hot you may need to pop them in the fridge for few minutes.
