- Stop trying to recreate the menu to fit your personal tastes.
If you go to a restaurant and see that it's busy, you need to understand that people are there to eat the food as designed.
If you just want no tomatoes, cool, but when you're looking to recreate a menu item to fit your preferences, that's where I draw the line. Making those orders messes with the kitchen flow and slows it down for everyone.
If you're allergic to certain things, this message isn't for you- you can't help an allergy.
For all of you picky adults, though... knock it off. If you're that picky then maybe you should just eat at home.

Ive dealt with regulars, whose whole dining experience was based on costumizing everything they ordered. Like it was their mission, to provide us with instructions with their order.
Not good for business it slows it down and when you give them the freedom to do it forget not doing it again!!!!!
The customer is always right in matters of taste. Also, some people have allergies or genetic differences which make them sensitive to certain ingredients.

I also own a food truck, and the first thing that customers see whenever they walk up is a sign saying it comes how it comes, no customizations.

@Newtonian40059 I'm not entirely sure how to respond to that 😂 but I have made it a policy to only modify stuff if I really have to (for example, I HATE MUSTARD so if a burger or anything has mustard on it, I'll ask for no mustard) but a lot of the time, I take a bite or two, decide if it needs ranch, then try it with ranch. If it tastes better to me, I smother it 😅 if it doesn't do much, I'll eat it regularly. That's how I usually do it, anyhow. Maybe I could do with less ranch now and again. But for fries, heck no! Plain fries deserve ranch, that is where I draw the line.
Restaurant being busy is a good sign used to be a thing. But now with social media its just what's viral is busy. And some of those restaurants are actually terrible.
If you wanna make your own items STAY HOME! you hold up the line for the rest of us
If a place doesn't have a 'build your own sandwich' option, I'm not gonna try asking for something completely different from everything else, but I will try to ask for an addition, like adding peppers or cheese to a sandwich that by the menu doesn't have it, I don't think 1 additional ingredient is a big deal
Yeah I worked at a restaurant making 6 types of street tacos, people would order all 6 on a single order which ment 6 Sautee pans for 1.5 Oz of various meats and veggies . It was crazy because while you were making a few orders ten more would come in it was a shit show
Mmmm this may be the one thing I disagree with. Let people customize a couple things here and there. That’s just good business and customer service. Not everyone has the same exact preferences.

@@Chaseh1616 as a former cook I can say when it's a busy weekend night, I was less likely to accommodate outside of something simple. Like he said there's a flow to the kitchen and when it's busy it's way too easy to do it the regular way because it's so ingrained you just kinda do it. If it's slower... Yeah we'd be more open to doing things but whenever it's busy not as much.
@@Halfguardcamper facts! I wasn't too happy seeing a ticket comeback with requests for changes when we were swamped. Something like no onions... Ok. But it starts to be some A la carte scenario nah. Not to mention the people that ask for stuff that is basically another dish. They order a double bacon cheeseburger with egg and then say I only want one patty, no cheese, no egg and no bacon. So... You just want a hamburger? Lol

The only mods I make are removing ingredients I don't like regardless of how they're used.
at sub shops theres only 2 things i would request, its not customizing it really as its just not adding some ingredients like tomato and mustard. thats it. i am not going to ask them to destroy their creations as i know that just upsets the chefs and the whole system they have. i worked in a restaurant kitchen for some time before and when someone came in with a custom order, the head chef would laugh and toss the ticket out. we dont got time for that, dont want something on it? thats fine, saves us product. wants a completely original dish thats not on the menu? theres the door.
I'm a picky eater, yeah. It's mostly about textures. However, I'm a super taster, so i have to ask to not dump cilantro on top of things. I also sometimes ask about getting things without bacon; believe it or not bacon doesn't make everything better. It just makes a mess of good flavors.

Preach! I was the cook at two restaurants and I can't tell how many times I looked at a ticket and thought "then why order it?" Or when the waiter or waitress comes up and says the person at table such and such wants to know if they can do this or that. A lot of times we would just say no and leave it at that. Because as he said there's a flow, you're in the groove and when they change something then it's very easy to kind of forget that they didn't want this or that because you've made that dish so many times, you kind of get into a zone. Especially when cooking on busy nights.

Me, too. I cook pretty good and I like my food better than most restaurant food. It's not that I'm such a great cook, it's just that I cook to my tastes and preferences. This man is right, my preferences just aren't worth the time for him, but to me, it matters.
If the food is good you never have to customize it. But I get it, I hated all the people who came in and wanted secret menu items or viral hacks or items or the drunks and druggies who try to out order each other and take two bites and then we throw it all away. But that is food service. If you ever watched the movie Waiting you know what really happens to those customers and they don't even know it.
My goofiest custom order was at a pizza place where they served chicago style stuffed pizza and this girl who was a vegan wanted the stuffed pizza with no cheese which doesnt work too well

Maybe put a note in the menu itself about this issue. The staff can just say we cannot customize or change the design of the dish.

Some of us are allergic to certain foods and can't eat it. Taking it out would allow them to actually eat it. Some is us absolutely hate certain foods. I despise raw tomatoes and unless you want to see me throw up, I'm taking it off every single time. Same goes for raw onions as that ruins the taste of every food to me. A friend of mine won't eat anything with onions in it regardless of what it is as he hates the taste of onions. My family owns several restaurants, 6 total, and it's really not that big of a deal to change someone's orders as long as it's relatively the same and not a totally new order.

@@saysoun752 asking to omit a item is different then asking them to make like 10 modifications to the item, i always ask to ommit jalepenos for example. What he is complaining is people going in, ordering a menu item then asking to add like 5 new toppings, remove a bunch of stuff and a bunch of other modifications. This sounds like an inability to execute your service affectively. I can understand if a customer is coming to you with way over the top requests. But no this or extra this shouldn't be that big of a problem. Been to tons of busy places, watched them handle requests with ease. You could also add that a customer needs to be understanding if mistakes were made due to the busy level though.

Go get yourself a job working on the line and see if you don't have a few things to say. A chef creates an item that he has perfected to not only have it completely changed but to have it come across the cook's line during a rush. That shit gums up the works as you have to slow down to decipher that shit. Cooking professionally is about muscle memory and rhythm.; That shit throws off the rhythm of the whole line.

Mods are fine as long as you can tell what menu item you ordered by the end. If you get a burger with A1 instead of bbq and no lettuce that’s fine, but if you get a burger with well done chicken instead and two bottom buns, we’re going to yell.

Let’s say a burger comes with LTOP and onion straws. You don’t want burger meat but want grilled chicken, no tomato or pickles but add jalapeños and something else. And instead of onion straws you want onion rings. That’s ridiculous.

First time i completely disagree with this dude. I’m not a huge veggie guy, I don’t want whatever tf someone throws on every sandwich? Customization of sandwiches is like, the entire point of a fucking sandwich
And I hate asking for over the top stuff, I dislike people who do too many mods (my brother), but like, each persons palette is different and some things should be altered to match lol

First time I’ve disagreed with one of your videos. Nothing wrong with your opinion, but many many restaurants I’ve gone to have obliged to mine or my family members custom requests regardless of the complexity of the order, and of course we tip well for this accommodation.

I tried it 😂, party of 8, of which 4 were kids. Customized everything in my poor french and they just sent it as it was in the menu. That's fine, fair game. What got me going is when they didn't bring the desserts that were included and paid for because it was closing time after lunch.

There's a difference between accommodation ("no mustard please, I don't like), and creating whole as new menu items ("I'll have the ham n swiss, but with cheddar and not swiss, beef instead of ham, some pickles, tuna, etc...")
