Yogurt Cake Recipe | Easy and Delicious

  • Easy and delicious yogurt cake made with accessible ingredients. Sprinkled with powdered sugar, it is all you need with your tea or coffee!
    Recipe: Yogurt Cake
    Ingredients:
    350g (1 ½ cups) of natural Greek yogurt
    4 large eggs, room temperature
    40g (⅓ cup) of cornstarch/cornflour
    70g (⅓ cup) of granulated sugar
    1 teaspoon of vanilla sugar
    1 teaspoon of lemon zest
    1 teaspoon of baking powder
    ¼ tsp of salt
    Powdered sugar/Icing sugar
    Instructions:
    1. Preheat the oven to 170 °C / 150 °C fan / 325F / gas mark 3.
    2. Separate the yolks from the whites. Add the egg yolk to a large bowl. Add sugar and vanilla sugar. Use an electric hand whisk and whisk for about 5 minutes until it doubles in volume. Add lemon zest, yogurt and whisk for 1 ½ minutes.
    3. Add the cornstarch and baking powder. Use a spatula to stir until combined. Set aside.
    4. To a large bowl, add the egg whites and ¼ tsp of salt. Whisk for about 4 minutes until it becomes stiff. Pour the yolk and yogurt mixture. Use a spatula to stir gently until everything is combined.
    5. Pour the batter in a cake tin lined with parchment paper. Cake tin measurements: 22cm (8.7’’) diameter.
    6. Bake for 35 to 40 minutes, until a wooden stick comes out clean after being inserted in the cake.
    7. Turn off the oven, open the door slightly and leave the cake to rest for another 5 minutes.
    8. Allow to cool down for about 10 minutes. Sprinkle with powdered sugar and enjoy!
    Notes/Tips:
    - The yogurt cake can stay in the fridge in an airtight container for up to 5 days.
    - Vanilla paste/extract can be used instead of vanilla sugar.
