    I have reuploaded this video due to a mistake in it that I was not comfortable with. Thanks to all those that spotted it the first time round!     Hi David, I'm new to both Grainfather and all grain home brewing. I have found all of your videos very informative-keep up the good work! Pausing and adding text is an excellent idea and works very well. One final suggestion you might want to consider, delay video production to include how the beer turns out.

      Hi Peter, it would be quite a delay if he showed results in the video. It takes quite a while to condition those beers. I like the current format where we get a tasting video of many beers at once.

    Fantastic video as always!
    The pause in the videos is great for screenshots to review later on in time! I like reviewing stuff from screenshots before next brewday.
    Just curious but what is 'this cause for concern' in Hot aeration?

      Many thanks David. Yes, I still give these screenshot times now in my latest videos as they are popular. HSA is a myth that was debunked for homebrew batch sizes many years ago but it is still raised by people :)

    Another great recipe - Thanks David. Without wanting to ruin what looks to be a very tasty beer, is there any way one could modify this (and other higher alcohol beers) to bring them into the 5% range? Would scaling the grain bill down ruin the whole thing or are there some tips you can give?

      Thank you, much appreciated:) You could modify this no problem at all. What I would suggest is doing the following:- Have the original recipe in brewing software and note the BU:GU ratio. Then scale the alcohol level down. Then adjust the first hop addition down until you see the BU:GU ratio match the original. You can use this method for other recipes also. Seems like a good topic for a future video also :)

    I am going to brew Red-X IPA soon, based on your recipe. Many thanks for sharing!
    Can you please advice what fermentation steps would work the best?
    I’m using the Grainfather conical fermenter. Yeast will use dry Jack’s M44.

      Thank you. I would start at 18C and then in the final days of fermentation start rising at 1C per day until you hit 21C. This will protect against DMS and encourage full attenuation.

    Brewing this tomorrow. Tough swapping hops to Centennial and Cascade (also 200g in total) and also raising mash temp few degrees to not ferment as dry. Hopefully beer clears out well to get that lovely red colour :)

    Another great vid David and like the changed format. Really looking forward to your step mash when you get there. Did one yesterday which finished as others have previously - a greater pile of sediment at bottom of GF. For me, step mashing increases this dramatically. Of course, I may be doing it wrong.

      There was such fine grain sediment to barely leave any free space between bottom of grain basket and base of GF. I'm blaming crush but my supplier says not so....When I cleaned the grain pipe, was stuck all thru the lugs? Doubt I would've got it chilled if hadn't whirlpooled.

      They were a one off as they had a particular specialty malt I wanted to try. Plus, I have my own mill....laziness. Lesson learned :-)

    The Holy Grail.....well for me anyway....a Red Ale! Been trying to get a lovely ruby red ale for years....can get a dark red but not a light red, always comes out copper coloured.....I hope this malt will finally end my hunt!!
    May I ask one question, why have you added some Carafa I? Is that just to make it a bit deeper in colour and not for taste reasons? (same reason for chocolate malt?)

      I agree Andy! The thing with this malt is that you can use it 100% The trouble is it then lacks mouthfeel. So the idea of the extra grain and to put that in and get the EBC back to where it should be. This tiny amount of carafa, within a hoppy beer like this will not have much effect , or any effect on taste but is a quick way of getting the colour back on track. Hope this makes sense.

    Have you any plans of brewing a Thornbridge Brewery Kipling Clone? I have brewed one from some information I got from internet and it tastes great after five weeks in the bottle. Unfortunately I can't get hold of an original bottle to compare it!

    Just a small observation; I've seen all of your videos, and you always whirlpool clockwise. Any particular reason? I would have thought that whirlpoolin' counter-clockwise would be better, since the filter is supported better? Any thoughts? :-)

      +Sune Faurschou Hei Sune :) Actually I did whirlpool anti clockwise also in a previous video. Direction is not a concern for me, its more a case of not going to deep and close to the pump. I did alot of testing with just water when it first arrived to fully realise how to use the paddle in terms of keeping the filter in place.

    Hello David, thank you very much for all the great videos! Do you add the hop tea to the hot wort in the Grainfather at 0 minutes or do you add it to the cooled wort in the fermenter prior to pitching the yeast?

      +Tychobrator Hop tea is added at the kegging/bottling stage. Check out my hop tea video for full details. Once people try it they tend to stay with it. Easier and better flavour :)

    I see you use both dry-hopping and Hop-tea in this recipe. Can you elaborate as to what using both would add beyond using just either?

      +Ej van de beek They are totally different in end result. Hop tea gives a similar result to 0 minute hops.

      Sounds good to me but it depends what you are looking for. Ebbegarden kveik is more neutral in flavour and works well in showcasing hoppy styles. Both will work :)

    David, I am curious as to why the Mash Out is at 78 deg C.All the recipes that I have seen are at 75 deg C.

      Mervyn Borjanovic Its a safeguard because the grain mix that is Red x malt is known to be more workable when mashed out abit higher.

    Please tell what it exactly does when you mash for 1h40minutes. I know about enzymes and fermentables etc but what kind of beer does this mash schedule produce?

      Nothing much, it just gives you the chance of more conversion time. I generally mash in for an hour :)

    Hi David, I have had a nightmare with this brew! 1st....it's copper not red, I can't believe it!!! 2nd FG 1.012 v 1.007, miles out and no idea....never missed an FG by so far. How did your brew end up??

    Hi David, just got all the malts for this beer but I got confused with hoptea. 0min hops are going as tea before bottling ? Then what about dry hoping ?

      Great. No problem. Dry hop and add the hop tea on bottling. The hop tea replaces the 0 min addition.

    I looked in the Grainfather app to see if Red X IPA was avail e within so I would not have to enter it. No luck. I’m ptreing coffee ale today but would like to give your red x a boil.

    Hi DAvid, I brew this beer and a friend too. It both finished at 1.016. One with Hornindal Kveik and the other one with MJ44. We use your step mash, nutrients and pure o2 with controler fermentation. We don't get with such a high FG ?

    Hi David, i'm planning on doing this recipe in a week or two, can't seem to find 'Best Caramel Pils' on 2 of the UK's big stockists, would Wayermann Carapils be a workable alternative?
    On a side note i'm just about to dry hop your Juicy IPA recipe, looking forward to quaffing that one :-)

      @@DavidHeathHomebrew Racked the Juicy IPA this afternoon and i have to say the aroma is tremendous, and after doing the FG [pretty much on the numbers] i had to have a cheeky taste and it didn't disappoint, really nice tbf and will of course be better again after a weeks conditioning, i did change the recipe ever so slightly in that i didn't add all the dry hop hops, i kept 9 grams of each hop back to make a hop tea of 750ml, hopefully the addition of the hop tea won't detract from the recipe too much, i'll report back in a week when i give it a proper tasting :-)
      All prepped for the Red X brew day in the morning ;-)

      @@DavidHeathHomebrew Thanks for that David, yeah its gone ok, bit foamy during the mash stages tbh, finished the boil 10 mins ago and added the 0 min hops, just letting it sit for 15 mins before a 2 minute whirlpool with the paddle :-) then cool it down and get it in the F/V

    Hi Dave, brewing a big hoppy APA today and cut myself while oxygenating the wort. Dropped a little blood in the wort. FAIL 😂. What are you thoughts ? Have you done that before. Is my beer ruined?

    Hey David I want to scale this to a 25L batch. got the grain bill sorted what about the hops? do i just double them?

    Your videos are quite informative but two things; 1. You need to speak faster, I want to keep finishing your sentences! 2. It would be good to see the final product and a tasting, there's no indication how these brews have turned out and what you might have done differently. There's not many start-to-finish brewing videos on TH-cam, most seem to stop once they've hit the fermenter and I find that's only half the story. Just my $0.02 - keep up the great work!

      +Schikitar Thanks for your feedback. None of these brews shared are the first attempt, they are tried and tested recipes that you can brew with confidence. I do mention this usually but perhaps I should stress it more. I always do a follow up tasting video later on. Holding back for the tasting would be very tricky from a computer storage point of view.

      Regarding your first point, youtube allows you to adjust the speed at which a video is being played, a great feature in my opinion. I watch a lot of videos at 1.5x or 2x speed, highly recommended!
