When you lay siege you'll notice after your initial camp is built the little blue markers on the ground, click those to build your own catapults, siege towers, ect.
As others have pointed out you can build siege towers and rams, but as you estavlish your siege camp the enemy garrisons establish their defense. So while you chose to starve them out they had ample time to build multiple ballistas. In my view you should simply add more units and not stick to starving your opponent out. If you decide to tackle their defense, you can build trebuchets. That might disable one or two of theirs.
@AdeptusDesu Yes, after one siege equipment like the ram or tower as the enemy defense will focus on them rather your troops. (If they have multiple they still might lock on to your troops :D) If you build two, one may get destroyed but you will have another one :). It was a bit weird that it didn't show you the building and progress of it. Try to zoom on it. Maybe you'll be able to see the defenses progress. I hope this helps my brother.
The besiegers always have advantages to begin with, and you were heavily outnumbered. Youre lucky that their overlord didn't come in a big army to destroy your army.
also they didnt have 76 archers those were the garrisons /party in the castle. if you move your cursor over the portrait a drop down menu will appear telling about the composition of the army. in this case the first portrait or the party in the castle had 108 archers and the other one had 37. apart from the other class of troops. hope this helps you.

I see, so if I had attacked right away they would have had fewer ballista/catapults?

you need a larger army in bannerlord to lay seige.
